How to Serve Holding one plate in each hand (hold edge of plate to make sure you do not touch where their food may go), walk to the first position at your table Wait for your head server’s nod, then place first plate (Lower with your left) Switch second plate from right hand to left as your are moving over to your next chair Take one step left when head server does Wait for head server’s nod, then place second plate (Diagram to in next few slides)

Entering the Dining Room 12 9 3 6 When entering the dining room follow your head server around the table into your position Enter here

Exiting the Dining Room When exiting the dining room, wait for the head server to start walking out and circle around the table behind them to follow them out. Do NOT break out of your line. Keep your arms folded behind your back

Clearing Dishes When clearing dishes follow your head server out to your table with your hands behind your back (MAKE SURE YOU ARE SMILING) Take the plate with your right hand (Raise with your right) Put the plate in your left hand as you move over to your next chair Wait for the head servers nod and take the plate with your right hand Follow the head server around the table and out of the dining room

Remember: LOWER, LEFT RAISE, RIGHT
