2 Our Story After defeating Snow White, the Queen has invited her subjects to a cordial feast to celebrate regaining her title as the fairest in the land. During the journey to the castle, guests will travel through the dark enchanted forest where they will encounter unique characters and delicious food foraged from deep within the woods. Guests will be led into the castle's dinning room where dinner will be served as a four course feast with special entertainment in the Queen's honor. There will be a few surprises before the celebration is over that will ensure it will be a night no one will ever forget.

4 MESMERIZING CHEDDAR CAULIFLOWER SOUP Is a smooth mixture of cauliflower and cheddar with a combination of spices that will have you mesmerized the rest of the night. Allergies: Dairy, Gluten **We have a vegan option of this soup, but it is not listed on the menu. If they ask for it, we will give it to them! First Course

5 SCAVENGED MIXED GREEN SALAD WITH PURPLE ONION & BALSAMIC VINAIGRETTE A bed of fresh spring mix greens from the dark forest. It is topped with walnuts, dried cranberries, and purple onion. This will be drizzled with a flavorful homemade balsamic vinaigrette. Allergies: Nuts Second Course

6 Third Course The short rib is slow roasted for hours in bath of flavor and then plated over top garlic infused mashed potatoes. On the side will be a bundle of roasted seasoned carrots and haricot verts that snap with every bite. Allergies: Gluten, Vegetarian VILLAINOUS GARLIC MASHED POTATOES joined with MALEFICENT BRAISED SHORT RIBS aside WICKEDLY ROASTED RAINBOW CARROTS & HARICOT VERTS.

7 Third course: Vegetarian, Vegan, Gluten Free Option A vegetarian dish that will leave guests spellbound. It is a half an acorn squash that is roasted, stuffed with a mixture of white beans, kale, onions, and quinoa (all seasoned to perfection), and finished with a drizzle of olive oil. Allergies: None! SORCERY STUFFED ACORN SQUASH WITH WHITE BEANS & KALES

8 Fourth Course A deathly dose of rich chocolate cake that melts in your mouth joined with a breath taking raspberry sauce and homemade whipped cream. Allergies: Gluten, Dairy SINFUL CHOCOLATE LAVA CAKE with RASPBERRY SAUCE

9 Fourth Course: Gluten Free Option Our gluten free dessert option, is chia seeds and almond milk mixed into a pudding. The light and airy mixture is topped with fresh raspberries. Allergies: None INFAMOUS VANILLA CHIA PUDDING

11 Dining Serving Training We will be serving using the Modify Gold Plating Service Style! What it is: All guests at the table are served at the same time 8 servers per table – 1 st Head Server – responsible for leading the team “Guest’s Key Contact” – 2 nd Server – 3 rd Server – 4 th Server – 5 th Assistant Server – 6 th Server – 7 th Server – 8 th Server

13 Modified Gold Plating Style…When serving plates Each server will have 2 plates, one in each hand, and will be serving the individual at their 1 st assigned seat at their 1 st table. You will walk out in one straight line starting with the 1 st head server.

14 Continued When the head server and assistant server sees that each of their servers are ready to serve, they will look at one another, nod their head informing each server to place down their dish with their left hand to their first seat. Take a step to the left and move the second plate from your right hand to the left, wait for the head and assistant server to nod, and serve your second guest from the left side with your left hand. You will exit in the same one straight line you came into the dining room.

15 Modified Gold Plating Style…When clearing plates You will walk out in one straight line starting with the 1 st head server. When the head server and assistant server sees that each of their servers are ready to clear, they will look at one another, nod their head informing each server to pick up their dish with their right hand to their first seat. Take a step to the left and move the first plate from your right hand to the left, wait for the head and assistant server to nod, and clear your second guest’s plate from the right side with your right hand. Exit in the same order you came in.

16 Key to Remember: LOWER LEFT – When serving plates, you always lower the plates on the left side of the guest RAISE RIGHT – When clearing plates, you always raise the plates on the right side of the guest

19 Always Remember…. Every time you walk into/exit the dining room, keep your hand behind your back! (No loosey goosey arms please!) Always smile and pay attention to your guests. Respond politely to any questions or comments. Work as a group and pay attention to your head server; serving goes smoothly when your whole team is in sync. Stick to the expected timeline; the dinner goes by quickly and we need to stay on task! Do not hesitate to ask any questions! Lower Left, Raise Right Have fun and thank you!!!
