The sicilian Cuisine

The sicilian cuisine is the best cuisine in Italy. The extravirgin olive oil is the most used by Sicilian people. There are also the aromatic herbs like : basil, parsley, mint, bay leaves, oregano, rosemary, sage, wild onions, fennel seeds and fennel, with jasmine, pine nuts, raisins that adorn the dishes with their perfumes. The almonds, hazelnuts and pistachios are very used for garnishing the dishes.

The starters We have different choises of good starters. The bread is very used for the preparation of the starters: we cook the “bruschette”( with tomatoes, garlic and parsley) pane ca’ meusa ( bread with spleen). We have other starters like: panelle, crocchette, caponata ( with lots of vegetables), stigghiola and artichoke thistle pumpkin flowers that are fried with a “pastella ” made with water and flour, and the amazing “pomodori secchi”.

Main courses In Sicily we often serve only one course : pasta. We cook it in many different ways and it has got different shapes. The “maccheroni” are the most famous and we eat them with tomato sauce. We have also “pasta cu li finocchi e li sardi”, “spaghetti cu l’agghia”, and “pasta al forno”. Maccheroni with tomato sauce pasta with wild fennel and sardines Spaghetti with garlic, oil and hot pepper Pasta al forno.

Second courses Meat and fish are the main ingredients. Mutton and beef meat are vey used.They are chopped for cooking the ”polpette”or “polpettone”. They are meat balls with garlic, bread soaked in milk, parsley. And the “falsomagro” prepared with veal, mortadella, cheese and boiled eggs, it’s called “bruciuluni” too. Among the fish we have the fried cod, “sarde a beccafico” ( sardines with bread crumb, pine nuts, raisins and bay leaf), mussels stuffed with garlic, bread crumbs and sardines, finally we eat breaded swordfish. Desserts Sicily is also famous for its delicious sweets and cakes. “i cannoli ” and “la cassata ”. ”I cannoli” are rinds of fried dough filled with ricotta mixed with chocolate.“Li sfinci di S. Giuseppe”: puffs filled with ricotta. “La cassata”: sponge cake,ricotta, vanille, candied fruits and rum. “La frutta martorana”: marzipan sweets with the shape of different fruits.
