1 Final Cooking Test CA 305 Final graded cooking assessment Recipe exercise Pre-training one week ahead of final cooking test

2 Rules You must write a recipe for 3 people with all ingredients used and method and take a picture or draw. (Enderun format). You will be graded for that. You have to make 3 portions for 3 guests. (HOT main course) You will have 5 hours to prepare the exam dish. For each minute a student is late 2% will be deducted from the final mark out of 100. You must use ingredients that are highlighted. You must make minimum 3 different garnishes (one simple and 2 complex)

3 Must use Ingredients 1 Chinese chicken or 1 pc Tenderloin of beef or 2 k Barramundi 3 carrots with tail 1 leek import 8 red onion 2 red bell pepper 8 slices of bacon 4 squids (80g each) 4 green cabbage leaves Other ingredients 400g of small crab 6 pcs chicken wings 50g of dry chorizo 1kg of red tomatoes 2 yellow bell pepper 20 stalks of spring onion 4 onions 2 big potatoes 1 bulb of fennel (local) 4 pistil of saffron 100g of parsley 100g of cilantro 1 garlic head ½ pack of Ziton (long Ziti tubes) pasta 100 g of green bean 100 g of bread crumb 1 lemon 1 orange 4 leave of warga dough local

4 Additional Ingredients At your disposition reasonable unlimited: Egg, flour, rice, milk, cream, butter, dry east, olive oil, vegetable oil, white wine, red wine, vinegar, chicken stock, all spices that you have in class
