Some Recipes Spaghetti alla carbona… Pancake… Borsch… Breaded Escalope Struffoli Napoletani… Piadina… Crepes…

Ingredients: Spaghetti 450 g, Bacon 225 g 5 Egg yolks, Pecorino or parmesan cheese, grated, Olive oil 3-4 tablespoons, pepper ½ tablespoon. Spaghetti alla carbonara recipe. Procedure. Dice the bacon. Bring a big pot of water to a boil and add salt. Cook the spaghetti. Heat the olive oil in a large skillet, add the bacon and cook for about 10 minutes. Slowly whisk about ½ cup of the pasta water into the egg yolks, using a fork. Add the parmesan cheese and pepper. Mix with a fork. Mix the spaghetti with the bacon. Mix well. Add the egg mixture to the skillet with the pasta. Taste the pasta and add salt or black pepper, if necessary.

INGREDIENTS: 200g. white flour, 25cl. milk, 2eggs, a pinch of salt 1) Whisk the milk, eggs and salt together; 2) Add the flour a little at a time and whisk until smooth 3) Heat a small amount of butter in a frying pan 4) Pour in enough batter to thinly coat the bottom of the pan; 5) Cook until it reaches a light golden brown colour, then turn the pancake over and cook the other side to the same point. Serve with anything you like. PANCAKES

BORSCH. INGREDIENTS 100 gr. beans, 1 carrot, 1 beetroot, 1 red or yellow pepper, 2-3 pieces of garlic, parsley, 1 onion, ½ jar of tomato sauce, half a cabbage Heat two table spoons of sunflower oil in a frying pan and cook them for two minutes. When ready add them to the boiling water. Take the same frying pan and fry the chopped onion in two table spoons of sunflower oil. When ready add tomato sauce and cook for another three minutes. Then add the crushed garlic. Put everything in the boiling water with the other ingredients. Then add the sliced cabbage. Boil everything for 5 minutes and then add salt and the chopped parsley. Serve the next day. PREPARATION: Take the beans and leave them in the water overnight. In the morning boil them until they almost ready (approx. 30 min). Meanwhile put 3 l. of water to boil, add beans then cut carrot and beetroot in small cubes.

Breaded escalope PREPARATION: 1. Dip the meat into the beaten egg. INGREDIENTS: eggs, meat, breadcrumbs and oil. 1.2. 3. 2. Then coat it with the breadcrumbs. 3. Finally fry in oil.

Struffoli Napoletani Ingredients: Flour 600 g, Eggs 4 + 1 yolk, Sugar 2 spoons, Butter 80 gr, 1 glass of limoncello, grated rind of a lemon, salt, oil, honey and candied fruit Preparation: Place the flour on a work surface, knead it with eggs, butter, sugar, the grated rind of half a lemon, a glass of limoncello, a little salt. Give the dough the shape of a ball and let it rest for half an hour. Then knead again briefly and divide into balls the size of oranges, roll on floured surface, cut them into small pieces. Fry the struffoli and drizzle them with honey. Sprinkle the candied fruit cut into small pieces and stir.

Ingredients: 500gr. white flour, 80gr. lard, 16gr. baking powder, 10gr. salt, 160ml. milk PIADINA Preparation: In a bowl mix the ingredients, until the dough is stiff. Cover with a damp cloth and leave for 30 minutes. Divide the dough into five balls and roll each with the floured rolling pin. H eat a non-stick pan and cook the piadina on both sides. Suggestion: Eat it with ham and cheese.

Ingredients: Preparation: Mix the flour, milk and beaten eggs. Pour into the frying pan. Crepes

Cook it. When it is cooked put something sweet or something savoury on top.
