 The traditional Latvian cuisine is shaped by the seasons.  In spring we drink birch sap which is collected only at the break of winter and spring when the sap moves intensively.  We eat lots of potatoes and often call them "the other bread". Our cooks are practical but very generous. We try to make dishes that do not take much time to prepare. Comenius Multilateral School Partnership ‘’Citizen of Care-land’’

 In winter we eat more meat and root vegetables, in summer dairy products predominate. We know how to make delicious treats from anything. Comenius Multilateral School Partnership ‘’Citizen of Care-land’’

In late summer we make jam, fruit preserves and pickles. Home-made food always tastes much better. And every Latvian knows a secret mushroom-picking place in the forest and a very special recipe for a mushroom dish. Comenius Multilateral School Partnership ‘’Citizen of Care-land’’

 Special foods are eaten at the winter solstice.  We eat grey peas with bacon at Christmas, it’s really Latvian.  In the last 100 yearS it has also become popular to bake gingerbread at Christmas. Comenius Multilateral School Partnership ‘’Citizen of Care-land’’

Boild eggs, coloured with brown onions skins and decorated with scratched designs have been the main Easter food for many centuries. Many families still boil and eat their own home coloured eggs at Easter. Comenius Multilateral School Partnership ‘’Citizen of Care-land’’

 Today the most popular celebration in Latvia is Jāņi or the summer solstice. The main “Jāņi” foods are fresh cheese and beer, wich is found on every Jāņi festive table. Latvian pies and sweet breads are also eaten during all traditional celebrations. Comenius Multilateral School Partnership ‘’Citizen of Care-land’’
