3 According to tradition, bits of hay are spread beneath the tablecloth as a reminder that Christ was born in a manger. Some practice the superstition that an even number of people must be seated around the table. In many homes an empty place setting is symbolically left at the table for the Baby Jesus or, for a lonely wanderer who may be in need of food, or if a deceased relative should come and would like to share in the meal. The supper begins with the breaking of the opłatek. Everyone at the table breaks off a piece and eats it as a symbol of their unity with Christ. They then share a piece with each family member. A tradition exists among some families to serve twelve different dishes at Wigilia symbolizing the Twelve Apostles.

Dumplings are cooked balls of dough. They are based on flour, potatoes or bread, and may include meat, fish, vegetables, or sweets. They may be cooked by boiling, steaming, simmering, frying, or baking. The tradition tells us to make them with cabbage and mushrooms. Some people also make them sweet, with dried prunes.

Pierniczki are Polish gingerbread cookies. The Polish city of Torun, has been famous for its gingerbread cookies and cakes - piernik - since the Middle Ages. The cookies are often cut in rounds or the shapes of St. Nicholas, hearts and other fanciful designs. Glazed cookies are often made before Christmas by whole families. Almost every teenager in Poland is capable of making them without any help from the adults.

19 Poppyseeds are considered a lucky food in Poland, so you will find them throughout the cuisine and especially on Christmas Eve and New Year's Eve. Makowiec is a poppyseed roll or strudel that is wildly popular.
