Service Style: Sweep Style Similar to modified gold plate but not as structured
Sweep Style Banquet Captain-directs teams of servers to what table to serve Teams of 4 servers One head server Staff will be designated specific seats at specific tables to serve (see example diagram) There will be designated servers to serve the special needs dishes Execution: Head out in individual teams as necessary, unlike modified gold plate the entire wait staff does not need to walk out, just individual teams walk out as necessary. No head nod acknowledgement from head server, each wait staff serves their guests once they arrive at their tables
When Serving Guests When a server is at their first guest they will lower and serve with their left hand the first plate Switch the plate from your right hand to your left and step LEFT to your next guest Then serve your next guest by lowering and serving with your left hand Exit back to the satellite kitchen immediately after serving guests Keep hands behind back when leaving

Clearing Plates Stand behind same guests Pick up plates with RIGHT hand (raise right) Move plate to left hand, step right, pick up second plate with RIGHT hand
