Coagulation 70°C Coagulation is when…. Coagulation: This is when the egg sets the mixture once it has exceeded 70°C. Example: quiche filling You add milk, egg and other ingredients into a quiche. Before this mixture is cooked it is very runny. When you put the mixture in the oven it the egg sets causing the filling to harden. 70°C In your books, try write an explanation of what coagulation is. Coagulation is when….

I have worked safely and hygienically to complete my practical on time. I have followed the recipe to produce mini quiches with some help. I have produced well cooked, equally sized mini quiches. Quiche Method Roll out pastry on floured surface 1cm thick. Ingredients 1 packet of ready to roll short crust pastry. 1 egg 2 tablespoons milk 25g cheese Extra fillings e.g. ham, onion etc. Roll out pastry on floured surface 1cm thick. Cut out circles using a biscuit cutter big enough for your tin. Using a pastry brush and oil to grease your bun tin or dredge with flour. Place the pastry circles in the bun tins. Crack one egg into a mixing jug, add two tablespoons of milk and beat with a fork. Grate 25g of cheese and add to the jug along with any other extra ingredients. Mix together. Add one tablespoon of the mixture to each pastry case. Do not over flow. Bake in the oven for 15 minutes at 200°C or gas mark 6. Remove carefully to cool. Tidy away. Quiches in the oven by: 12:00 Tidied away by: 12:15

Mini Quiches 1 4 3 5 7 8 6 9 2 10 11 12 Preheat oven 200°C / Gas 6 Roll out pastry on floured surface 1cm thick Cut out 8 circles – don’t twist the cutter! Carefully place into floured bun tin Crack one egg into measuring jug 5 7 8 6 Add 2 tablespoons of milk and beat with a fork Grate 25g cheese and add to jug Add extras - chopped ham / bacon /tomato /onion Add to measuring jug, season and mix 9 10 11 12 Spoon 1 tablespoon of the mixture into each pastry case Place on cooling rack and leave to cool Bake in the oven for 12-15 minutes until golden What other ingredients could be used as flavourings?
