2 Star Challenge Lesson objectives: To understand the different functions of eggs in a lemon meringue pie. To know the function off egg in the different elements of a lemon meringue pie. 3 Lemon Meringue Pie Pastry 175g SR Flour 75g Butter 2 Tbsp caster sugar
1 egg yolk 1-2tbsp cold water Lemon Filling 3tbsp Corn flour Finely grated rind of 2 lemons 150ml Lemon juice 75g Caster sugar 2 egg yolks Meringue toppings 2 egg whites 100g caster sugar Pastry 1. Put flour and sugar in bowl. Add butter in pieces and rub in. 2. Mix the egg yolk with 1 tbsp of the water and stir into the dry mixture with a knife until it draws together. Add more water if needed. Line a quiche dish with pastry. Filling and meringue 1. Mix corn flour and water together in a saucepan. Add the lemon rind and juice and bring slowly to the boil, stirring constantly with a wooden spoon. 2. Simmer gently until the mixture thickens, then remove from the heat and stir in the 75g sugar. 3. Leave to cool slightly and then beat in the egg yolks. 4. Pour into the cooked pastry case. 5. In a clean bowl, whisk the egg whites until stiff with an electric whisk. 6. Gradually add the 100g caster sugar, 1 tbsp at a time until the meringue is glossy. 7. Spoon or pipe the meringue over the lemon filling. Bake 150C/Gas 1 for 20 minutes until the top is pale golden.

Add the lemon rind and juice and bring slowly to the boil, stirring constantly with a wooden spoon. 2. Simmer gently until the mixture thickens, then remove from the heat and stir in the 75g sugar. 3. Leave to cool slightly and then beat in the egg yolks. 4. Pour into the cooked pastry case.

6 Meringue Meringue topping 2 egg whites 100g caster sugar Meringue
1. In a clean bowl, whisk the egg whites until stiff with an electric whisk. 2. Gradually add the 100g caster sugar, 1 tbsp at a time until the meringue is glossy. 3. Spoon or pipe the meringue over the lemon filling. Bake 150C/Gas 1 for 20 minutes until the top is pale golden. WARNING: If there are any traces of egg yolk in your egg white, it will not work.
