EQUIPMENT AND ITS USES

MCMC Used to remember the classifications of Measuring, Cutting/Prepping, Mixing, and Cooking/Cleaning All kitchen equipment is divided into four categories: Measuring Cutting/Preparation Volume Cutting equipment Weight Appliances Temperature Mixing Cooking/Cleaning Mixing equipment Bakeware Appliances Cookware Appliances

APPLIANCES Blender: used for chopping, blending and liquefying Food Processor: blending, chopping, grating, shredding, grinding, kneading, and slicing Hand Mixer: a hand-held electric appliance; lighter and less expensive; used for blending, beating, and whipping ingredients Stand Mixer: electric mixer that leaves hands free; often has attachments; used for blending, beating, whipping, and kneading dough

Appliances continued….. Electric skillet/griddle: fry pan whose temperature is controlled by a thermostat; high dome cover with vent;(Griddles are similar to skillets, but have no sides or lids); used for frying, baking, roasting, panbroiling, stewing or simmering foods Slow Cooker (Crock Pot): a heating base, cooking vessel that may be removable and a lid; cooks food slowly; convenient for one-dish meals

Appliances continued….. Toaster: comes in two- and four slice models, may have extra-wide openings for bagels and thick-sliced bread; used for browning/toasting breads and pastries on both sides at one time Toaster Oven: uses less energy and creates less heat than a full-size oven; used for baking and broiling small amounts of food in addition to toasting

FACTS TO KNOW… A piece of equipment used for cutting shortening into dry ingredients is known as a pastry blender. The microwave oven is a kitchen appliance that quickly cooks, defrosts and reheats most foods. Nested cups that contain ¼, 1/3, ½ and 1 full cup are dry measuring cups.

FACTS to know….. To correctly measure flour, you should use a dry measuring cup leveled with a straight-edged spatula. A liquid measuring cup should be used to measure 6 oz. of lemon juice or ¾ cup of milk. To measure 2 teaspoons of salt, you should use 1 teaspoon measuring spoon.

FACTS to know….. The most important consideration when buying a refrigerator is the proper size to fit easily in the available space. The UL seal on an electrical appliance indicates it has been tested for safety. The rubber scraper/spatula is the BEST utensil to use to scrape bowls and saucepans and to fold one ingredient into another.

FACTS to know….. If a recipe requires 5 c. of flour, you should use a dry measuring cup. Judy is preparing banana nut bread to take to a sick friend. The cooking equipment she would use if she plans to make 12 slices to take to her neighbor would be a loaf pan. A convection oven cooks food using heated air that is forced through the oven by a fan.

FACTS to know….. The AGA seal on a gas range indicates that it has been tested for safety. In the microwave oven, food is cooked by the friction of vibrating molecules that creates heat. A valuable safety feature for a small appliance is that is senses when the appliance is not in use and turns itself off.

FACTS to know….. One of the most important features to consider when purchasing a small kitchen appliance is the number of jobs the appliance will perform. Peas should be removed from hot liquid with a slotted spoon. A peeler is used to remove skin from fruits and vegetables

FACTS to know….. A steamer is a basket-like container used to cook foods to retain nutrients. Kitchen shears should be used to cut fresh herbs.
