Party At The Parthenon! Dining Training

Theme Overview Our guests will experience what it was like to live and party as royalty alongside the famed Greek gods and goddesses of ancient Greece They will be able to take in the sites, sounds, and tastes of what the ancient times had to offer by indulging in Greek food, music, and much more!

Reception Food Spanakopita Greek spinach pie filled with spinach, onions, & feta/ricotta cheese Possible Allergens: Dairy (Feta/Ricotta Cheese), Egg, Wheat (Phyllo Pastry) Roasted Vegetables and Hummus on a Pita Crisp Possible Allergens: Wheat (Pita Crisp)

Appetizer Course Athena’s Avgolemono Soup Chicken, Orzo, Eggs, Fresh Lemon Allergens Include: Egg

First Course Galeotes’ Greek Salad Red onions, tomatoes, greek olives, crumbled feta, green peppers, with a homemade vinaigrette Allergens Include: Dairy (feta cheese)

Main Entree Socrates’ Chicken Skewer Greek marinated chicken with rice pilaf and greek vegetables with a side of tzatziki sauce Allergens Include: Wheat (rice pilaf), Dairy (tzatzkiki sauce)

Vegetarian Entree Titans’ Pesto Tortellini Tricolored tortellini stuffed with cheese, garlic spinach pesto, roma tomatoes, & parmesan cheese Allergens Include: Wheat & Dairy

Coffee Service Before dessert is served and then again after dessert is served Head server brings out regular coffee Server 2 brings out creamer 2 volunteer servers will bring out decaf coffee

Dessert Entree Rheia’s Rice Pudding Greek style rice pudding with orange zest Allergens Include: Dairy

Dining Service We will be using the modified gold plate serving style. The head server will serve seats 1 and 2. Server 2 will serve seats 3 and 4. Server 3 will serve seats 5 and 6. Server 4 will serve seats 7 and 8. The head server will lead the team to the table. Each server will stand behind their first seat and lower the plate with their LEFT hand in front of the guest. The server will then step one seat to the left at the direction of the head server and place the plate in the same manner. When clearing the servers will start at the same seat and lift the plates with their RIGHT hand. Each server will step to the left and do the same.

Assigned Teams To Assigned Tables Team 1 will serve tables 1 and 4 Team 2 will serve tables 5 and 8 Team 3 will serve tables 2 and 6 Team 4 will serve tables 3 and 7 Team 5 will serve tables 9 and 10

Assigned Servers To Assigned Seats Head Server will start serving with guest sitting at 12:00. 12:00 is always seat on side with the stage Server #1 will be at 3:00 Server #2 will be at 6:00 Server #3 will be at 9:00

Thinks To Remember! Keep thumbs off top of plate! Raise with your right hand! Lower with your left hand! If you’re not sure if a guest is done say “are you still working on that?” “may I take your plate?” Keep speak formal; try and say “my pleasure” instead of “no problem” or “you’re welcome” Smile! 
