With over 60 years experience Mondial Forni ensures the highest baking quality and maximum reliability in their ovens. The Ciclomondial combustion gas recirculation deck ovens are suitable for baking many different types of product. Ciclothermic deck ovens are heated by hot air ducted to the top and bottom of each deck. To ensure high- speed circulation and consequently, even heat distribution, the ducts convey hot gases into manifolds at the back of the oven where a circulation fan is fitted. Combustion gases are partly recycled to optimize energy efficiency and partly discharged via the flue. Flue draught adjustment is set when commissioning the oven; no further adjustment is required during normal use. Comprising of: Stainless steel front, loading end and external extract canopy for easy cleaning, in compliance with the sanitation standards and for long durability of the materials. Tempered glass balanced doors opening downwards, allowing a perfect view of the product during baking cycle, easy to remove for cleaning without using any tools. Steam generators placed in direct contact with the combustion smokes, for a large steam production and a quick recovery time. Baking decks equipped with a steam generator overpressure discharge system ensuring the ideal baking conditions Electronic control panel with standard oven automatic ignitions, equipped with digital displays showing steaming and baking time for each deck. Possibility to place the combustion gas recirculation fan at the top of the oven (optional) instead of at the back allowing the oven to be placed everywhere in the bakery (three sides can be inaccessible). Possibility to bake with different temperatures at the same time. Maximum difference: about 50°C in the top decks thanks to the MIX device (optional).
