2 Squash and Corn Casserole From the kitchen of Southern Living Artistically Concocted by Krissie

3 Before we begin… all wonderful!! While I was cooking dinner one night, I happened to find this recipe in one of the Southern Living cookbooks. I was looking for a new recipe for squash because I get tired of the same food all the time! Thankfully, I glanced at this recipe, decided I’d give it a shot, and let me tell you…it is wonderful!!

4 Ingredients 12 ounces of cream corn (it tastes better if you use a little more) 2 tablespoons butter ½ small onion 1 pound sliced squash (I use 3-4 squash) 1 cup shredded cheddar cheese ¾ cup breadcrumbs Parsley (as much as you’d like) 1 egg, beaten Pepper, garlic, and other desired spices

5 Krissie’s preferences Usually, I don’t use a generic brand of cream corn; however, for this recipe, because it is baked, I use off brands. As for the onions, use as much as your mouth craves… Cheese– in my opinion, cheddar is entirely too strong. I use Colby Jack shredded cheese if a recipes requires cheese. Spices, spices and more spices!! I try not to add too many spices simply because the true taste of the casserole is masked. As you will notice, the cooking directions instruct the onion and squash to be sautéed together; however, I like onions cooked a bit more…therefore, I sauté the onions for at least 3 minutes, then I add the sliced squash.

6 Cooking Directions Slice onion and squash Melt butter in skillet Sauté onion slices until tender Add squash to onion, sauté for another few minutes

7 Still preparing… Turn off heat Stir corn, squash mixture, cheese and remaining ingredients together in skillet Spoon into greased baking dish Bake at 350 degrees for 50 minutes or until casserole is set.

8 What to eat with the squash and corn casserole… Most kinds of chicken…grilled, fried, barbeque, stir-fry Beef roast Pork roast  The best thing of all: this recipe is oh so easy and takes only minutes to prepare!
