Sheilas Recipes Passover Coconut Macaroons In all honesty, this is not Sheila's original. It is taken from Mr. Food.Mr. Food 2 packs (14oz.) coconut 5 Egg Whites 1 ½ cups sugar - Preheat oven to 350 - Coat cookie sheets with cooking spray - Place coconut in large bowl - In saucepan combine egg white & sugar and cook the mixture over medium heat until sugar is dissolved and the mix is bubbly - Remove from heat and pour over the coconut. Mix well - Squeeze together a tablespoon of mixture. Shape into balls. Place 1 inch apart on cookie sheet. - Bake for 12-15 minutes until they color slightly. Turn off oven and allow macaroon to sit in oven for 15 minute until they are golden.
Sheilas Recipes Passover Rolls Why just eat matzah when you can have soft fluffy rolls during Passover. 3 Eggs 1 cup matzah meal salt 3 tablespoons sugar 2/3 cup butter or margarine 1 cup water Heat in saucepan 2/3 cup water and butter. Stir until mixed. Add 1 cup of matzah meal. Add eggs one at a time. Bake at 375 until brown.
Sheilas Recipes Potato Kugel Modified from the Complete American Jewish Cookbook 6 large size potatoes, peeled 2 eggs ½ cup matzah meal ½ teaspoon baking powder 1 ½ teaspoons salt ½ teaspoon pepper 1 large onion, chopped fine ½ cup oil Grate potatoes quickly so they will not discolor. Squeeze out excess liquid. Add eggs and mix well. Mix together dry ingredients. Add to Potatoes. Sauté onion in hot oil until browned. Add both to batter. Stir well. Pour into greased baking pans. Bake at 350 until brown and crisp edges, about 1 hour.
