2 What is fructose? Fructose is a monosaccharide Monosaccharide: sugar that cannot be broken down into simpler sugars Takes two form: 5 member ring (more common) and linear form Boiling Point: N/A Melting Point: Density: It doesn’t hydrolyze (decompose by reacting with water) in acidic environments

3 Fructose and Glucose Fructose and glucose share the molecular formula C 6 H 12 O 6 Structural isomer: same molecular formulas but different structural formulas Glucose: aldohexose (carbon is attached to a hydrogen atom by a single bon and an oxygen ato by a double bond). Frcutose: ketohexose (carbon is attached only to an oxygen atom by a single bond).

4 Types Of Fructose Natural Fructose: found in fruits and vegetable About 1-7% in fruits and 3% in vegetables The concentration of fructose increases in fruits as they ripen and sucrose in the fruits gets broken down into fructose and glucose (gives the fruit a sweeter taste) Also found in honey: about 40% Crystalline fructose: obtained from processing corn and suger 100% pure fructose in crystalline form

5 Uses of Fructose Fructose can be converted into hydroxymethylfurfural (HMF) and turned into: diesel-fuel additives, plastics, and diesel fuel itself Used as a sweetener (low-calorie sweetener): used by people with diabetes because of its low Glycemic Index Used to increase the shelf life of foods like soft moist cookies and nutrition bars Can be consumed as high fructose corn syrup (part of glucose is turned into fructose to give it a more sweeter taste) Also a possible cause ofobesity
