French cuisine By Karl Lamothe

Interest in topic I chose this topic because of the popularity of French cuisine and the French culture. People pay a lot of money to eat at a French restaurant. French food plates come in really small amounts.

French cuisine origin Early French recipes ere heavily influenced by Italian cuisine. In the 17th century Chef François Pierre La Varenne and Marie-Antoine Careme shifted French cuisine away from its foreign influence and developed their own indigenous style. Cheese and wine are major parts in French cuisine. French cuisine was codified in the 20th century by Auguste Escoffier to become the modern haute cuisine. All around the world the French cuisine is ranked 1.

French cuisine & religion France main religion is Catholicism. Restrictions: No meat on Ash Wednesday, Good Friday and all Fridays in Lent - and for Catholics in some dioceses, meat on any Friday. Animal products such as fat, eggs, dairy and broth are permissible, as is fish. Pure grape wine and leavened bread are used for mass.

Cultural norms in French cuisine When sitting on a dinner table, your hands must be on the table and your elbows off of it.(Do not put hands on your lap) If you are dining formally, bread will get its own plate. If a bread plate is not in place then the bread rest on your table cloth (Not on your plate). Also taking a bite out of your bread is considered boorish. One must tear the bread to pieces. If you are using bread to soak up sauce, use it on the end of a fork. Also an important rule is to always follow the host. The host control the diner table. When to eat, talk, and drink all depends on the hosts’ course of action. In France if you are asked for the salt, you simply pass the salt. After each course, you should wipe your plate with a piece of bread. It is more polite to use a piece of bread on your fork, rather than in your hand. In a more formal setting, each course is served on a new plate, so cleaning the plate is not necessary. When pouring wine, stop when the glass is three-fourths full. A French dinner often consists of a salad with vinaigrette for the starter, main course, cheese course, dessert, and coffee.

Functionalist perspectives Frances unfair economic classes led to the French revolution. The third estate were treated badly and had to work day-by-day for a little amount of food. Due to lack of food and unfit living, the people started to revolt. Which later became the French revolution. The influence of Catherine de Medici on modern French cuisine is great. She brought the idea that the food should be like theater/art. The diner table and new foods were introduced to their menu. King Louis XIV introduced the concept of serving the food slowly and in succession, instead of service en confusion. Due to the popularity of France and its cuisine, France has an estimate of 80 million tourist annually.

Interactionalist perspective People who orders French cuisine are viewed as a higher class. Also with a lot of class and appreciation of the art that the food brings to the place. French cuisine = High class, elegance, money, art, taste, emotions.
