Chocolate Chip Cookies   Chocolate Chip Cookies ½ cup (c.) shortening PACK & LEVEL ¼ cup (c.) sugar ½ cup (c.) brown sugar PACK & LEVEL 1 egg ½ teaspoon (t. or tsp.) vanilla 1 cup + 3 tablespoons (T. or Tbsp) all-purpose flour ½ teaspoon (t. or tsp.) baking soda ¼ teaspoon (t. or tsp.) salt ½ cup (c.) chocolate chips Clean & Return the Plastic Container. * Put your colored card in the container. Wrong  Right!  1. Check oven racks for correct placement. 2. Preheat oven to 350 F. a. If the oven temperature is not accurate it can affect the texture off the cookies. They may get dark around the edges if it is too hot. b. Avoid opening the oven door during baking. 3. In a mixing bowl, cream shortening and sugars on medium speed for 3 minutes. a. Cream means to beat ingredients, such as shortening and sugar, combining until soft and creamy. 4. Add egg and beat well. 5. Add vanilla and beat. 6. In a separate bowl, combine flour, baking soda and salt. 7. Gradually add the dry mixture to the creamed mixture. 8. Stir in chocolate chips. Stir in with a spoon so that you do not break the chocolate chips. Wrong  Right!  Use Kitchen Aid – push back of bowl down © Jennifer Choquette

Answers to back “Problem Solving” activity can be found in the recipe. 9. Drop batter by teaspoonful onto a cookie sheet that is lined with parchment paper. Cookies should be uniform in size and should be placed about 2 inches apart in order to bake more evenly. a. Use a spoon and rubber scrapper to drop the dough onto the cookie sheet. b. Shiny cookie sheets lined with parchment paper can prevent the cookies from getting too dark. c. When baking with two cookie sheets at one time, make sure the oven racks are not too close to the top or bottom of the oven. Also make sure that one rack space is left between the cookie sheets. Switching the cookie sheets around half way through baking can help the cookies bake more evenly. d. You could lightly grease the pan instead of using parchment paper. 10. Bake at 350 F for 10-12 minutes until the cookies are a light golden brown. a. If you remove the cookies from the oven when they are lightly golden, you can allow them to rest and continue baking on the hot cookie sheet for 1-2 minutes until they set-up. This will help prevent them from getting too dark. b. When you make a larger batch of cookies, the dough should be placed on a cool cookie sheet to prevent excess spreading of the dough. If your pans are warm, try keeping the dough cool in the refrigerator. Also, make sure that your pans do not have too much grease on them. Scenario 2 Scenario 1 © Jennifer Choquette

Cooling racks allow air to circulate around the product and prevent them from getting soggy. b. Store soft cookies, like these, in an air-tight container. c. Store crisp cookies, like Oreos, in a container with a loose fitting lid. d. Cookies can easily be frozen is sealed tightly and will be delicious at a later date!
