Objectives To know the different types of menus To understand what types of service is suitable for each menu To be able to research and find local outlets that use each different type of menu.

Types of Menu Table d'hôte – a ‘fixed’ or set-price menu usually consists of two or three courses with a limited selection of dishes available at every course. A la carte – a menu where all the dishes are individually priced and cooked to order. Party or function menu – this menu can vary from drinks or canapés to a sit down banquet e.g. Weddings, anniversary, dinner dance. This menu has a fixed price and chosen beforehand. Children's menu – often a separate menu that is more colourful and may include a theme. Limited choice and has some healthy options or multiple choices so parents can make up the meal to suit

Types of Menu Ethnic or speciality menu – this can be a fixed price or a la carte. Speciality food of a particular country may be on offer (e.g. Chinese or Mexican) or the food itself could be specialised e.g. Fish, pasta, vegetarian. Fast food/cafe – these menus usually have a choice of quick-to- prepare foods at set prices. The foods may range from snacks, sandwiches and cakes to a full dinner or breakfast. They also include drinks to go with or without food. Rotating menu cycle – this is a ‘fixed pattern’ of menus that cover a ‘fixed number’ of days (called menu cycle). E.g. Hospital and schools use these types of menus.

Activity 1 – Research Task Using the internet find an example of each menu from outlets in the local and national area. Example; Party or function menu - Losehill Hotel – weddings – sample menu
