Snacks - Fried Potato Chips Processing of potato chips Potatoes selected for frying –must have high enough solids to keep the chips from being greasy –must not have too much sugar or chips will be dark after frying –potatoes build up sugars if they are stored below 60 o F Potatoes are washed to remove soil Potatoes are peeled –mechanically by rubbing against a rough surface but does not remove all the peel unless a large amount of potato flesh is removed –chemically by dipping in strong alkaline solution such as sodium hydroxide –this removes peel in crevices but creates waste that is expensive to dispose of

Snacks - Fried Potato Chips Processing of potato chips continued Potatoes are sliced –slice thickness affects texture –slice thickness also affects the amount of oil absorbed with thinner slices containing a higher percentage of oil after frying Potatoes are fried –Frying temperature is usually above 400 o F –During frying, water is lost and replaced with oil Seasoning –salt (finally ground) is sprinkled onto the hot chips so the salt will stick –other seasonings are added to produce different flavors of chips –artificial vinegar flavor is the sodium diacetate
