Step-by-step directions for preparing: Roasted Potato Wedges Click on green arrow to go forwards

Step #1 Before you begin, sanitize work area. Click on green arrow to go forwards

Step #2 Gather ingredients and cooking equipment. Potatoes Large colander Cutting Board Knife Pan release spray Click on green arrow to go forwards or red arrow to backwards

Step #3 Place potatoes in a colander. Click on green arrow to go forwards or red arrow to backwards

Step #4 Scrub potatoes with a vegetable brush. Place in a steam table pan or lexan. Click on green arrow to go forwards or red arrow to backwards

Note: Potatoes can be cleaned the day before and stored in the refrigerator. Click on green arrow to go forwards or red arrow to backwards

Step #5 Cut potatoes into wedges by placing potato on the cutting board and cut potato in half. Click on green arrow to go forwards or red arrow to backwards You may also use your fruit slicers to cut the potatoes into wedges.

Step #6 Cut potato half into wedges by cutting potato halves into four pieces. Click on green arrow to go forwards or red arrow to backwards

Step #7 Spray pan with pan release spray. Click on green arrow to go forwards or red arrow to backwards

Step #8 Place potatoes on prepared sheet pan. Pour ¼ cup olive oil blend on potatoes. Note: 25 whole potatoes cut into wedges will fill a sheet pan. Click on green arrow to go forwards or red arrow to backwards

Step #9 Season potatoes with 1 ½ teaspoon salt and ¼ teaspoon pepper. Toss potatoes with gloved hands or spoon to evenly coat the potatoes with oil and seasonings. Potatoes should be in a single layer. Click on green arrow to go forwards or red arrow to backwards

Step #10 Place potatoes in a 350 o F oven and bake for approximately minutes until tender and golden. Halfway through baking stir potatoes so they brown evenly. To test tenderness of the potatoes, stick a paring knife into a potato wedge. The potato should be tender and pierce easily. Click on green arrow to go forwards or red arrow to backwards

Step #11 When potatoes are finished baking place them in a hotel pan. Place hotel pan in a steam table well on the serving line. Serving Size: K-5: 3 wedges 6-12: 4 wedges Click on green arrow to go forwards or red arrow to backwards
