2 Why use a work plan? It is important to use a work plan to help meal preparation run smoothly. To implement a work plan, follow these steps: Steps 1- 5

3 Cooking time and temperature
Steps for Work Plans 1. Select, read, and interpret the recipe Ingredients: 4 T flaxseeds, ground 2 c nut milk (almond milk should work great) 2 c strawberries 2 c blueberries 2 bananas Directions: GRIND flaxseeds with either a coffee/spice grinder, food processor, pepper mill, or mortar/pestle. PLACE flaxseeds, nut milk, berries, and banana in blender; cover. Blend on medium speed 1 min. or until smooth. POUR into large plastic or glass pitcher. SERVE over ice cubes, if desired. Store in refrigerator. Evaluate recipes: Nutrition Time Equipment Cost/expense Read recipes, noting: Cooking time and temperature Cooking terms Measurements Re-read recipes and be sure you have not questions about the recipe (research as needed)

All recipes are different. Tasks may be more or less complex. Following a recipe is critical to ensuring it’s success Listing the preparation steps, helps to analyze a recipe to determine who will execute which tasks This also helps to determine how you will dovetail tasks to save time and energy

6 Listing Preparation Tasks
Dovetailing is accomplished during a lab by multi-tasking. This means tasks can be done at the same time to save time and energy. Examples: Darius cuts vegetables while his water comes to a boil on the range Quinn prepares mashed potatoes while her roast cooks in the oven. What examples can you think of?

Some tasks may not be on the recipe: Wash hands Set the table Gather ingredients Wash fruits and vegetables Cut all fruits and vegetables Measure ingredients (should be done before beginning cooking) Gather equipment Prep sink with hot, soapy water and counters cleaned

Some tasks are listed on a recipe, such as: Preheat oven Stir wet ingredients together Stir dry ingredients together Combine wet and dry ingredients Bake for 45 minutes

Note that analyzing and listing the preparation tasks helps ensure that everyone is working during the lab time It also helps to ensure we finish on time Why would we want to finish on time?
