Rosemary Chicken and Baked Sweet Potato 2 tablespoons olive oil 1 tablespoon paprika 1 1/2 teaspoons rosemary leaves 1 teaspoon sea salt 1/2 teaspoon black pepper 1/2 teaspoon garlic powder 4 chicken breasts (about 2 pounds) 4 sweet potatoes Kerry Gold butter Salt and pepper Preheat oven to 425°F. Mix oil, paprika, rosemary, sea salt, pepper and garlic powder in large bowl. Add chicken; toss to coat well. Place chicken on pan. Bake 30 to 35 minutes or until chicken is cooked through. Heat oven to 400° F. Pierce each sweet potato several times with the tines of a fork. Place the sweet potatoes on a rimmed baking sheet lined with foil. Bake until tender, about 45 minutes. Make a slit in the top of each sweet potato. Add Kerry Gold butter and salt and pepper to taste.

Almond Butter 2 C Raw Almonds 1 T Raw Honey (optional) 1/2 t Sea Salt (optional) Place almonds in food processor. Process for 8-12 minutes. You will need to scrape down the sides in the beginning. If you choose to use the honey and salt, stir in by hand after the butter is made as it will seize the mixture if you try to add it before. *Chef’s Note: If using soaked, dehydrated (dried) almonds, you may need to add a little oil. This recipe requires the use of completely dry almonds.
