1 cup Flour 1 cup Oil 2 cups Onions, chopped 1 cup Celery, chopped 1/2 cup Green Pepper, chopped 3 tsp. Salt 1/2 tsp. Red Pepper 1/2 tsp. Black Pepper 1 tsp. Worcestershire Sauce 2 Tbsp. Garlic, chopped 1 small can Tomato Paste 1 can Tomatoes 6 cups Water 3 lb. Crawfish Tails, peeled 2 Tbsp. Parsley, chopped 2 Tbsp. Green Onion Tops, chopped Crawfish Creole - Jane Doe 4

6 Peel onion and garlic Wash onion, celery, green pepper, and garlic and then chop Measure and set aside Measure salt, red pepper, black pepper, sauce, flour, oil, and water Place in individual dishes Open can of tomatoes and tomato paste Peel and wash crawfish tails removing bad ones Wash parsley and green onion for garnish Chop parsley and onion
Crawfish Creole - Jane Doe 7 Add oil and flour in the seafood pot Use moderate heat and stir continuously until golden brown Add the onion, celery, bell pepper, seasonings, and garlic Cook until onion is transparent Add tomatoes and tomato paste stirring to mix well and cook for 5 minutes Add the water and bring to a boil. Lower heat and simmer for 1 hour Add the crawfish tails and remaining garlic and simmer for 15 minutes Add the parsley and onion tops and cook 5 more minutes Serve over pasta or rice or serve as a main dish with your favorite sides
