4 1 cup Flour 1 cup Oil 2 cups Onions, chopped 1 cup Celery, chopped 1/2 cup Green Pepper, chopped 3 tsp. Salt 1/2 tsp. Red Pepper 1/2 tsp. Black Pepper 1 tsp. Worcestershire Sauce 2 Tbsp. Garlic, chopped 1 small can Tomato Paste 1 can Tomatoes 6 cups Water 3 lb. Crawfish Tails, peeled 2 Tbsp. Parsley, chopped 2 Tbsp. Green Onion Tops, chopped Crawfish Creole - Jane Doe 4

5 The above list of utensils and equipment will be necessary for use in the preparation of your Crawfish Creole. 6 6  Peel onion and garlic  Wash onion, celery, green pepper, and garlic and then chop  Measure and set aside  Measure salt, red pepper, black pepper, sauce, flour, oil, and water  Place in individual dishes  Open can of tomatoes and tomato paste  Peel and wash crawfish tails removing bad ones  Wash parsley and green onion for garnish  Chop parsley and onion

7 Crawfish Creole - Jane Doe 7  Add oil and flour in the seafood pot  Use moderate heat and stir continuously until golden brown  Add the onion, celery, bell pepper, seasonings, and garlic  Cook until onion is transparent  Add tomatoes and tomato paste stirring to mix well and cook for 5 minutes  Add the water and bring to a boil.  Lower heat and simmer for 1 hour  Add the crawfish tails and remaining garlic and simmer for 15 minutes  Add the parsley and onion tops and cook 5 more minutes  Serve over pasta or rice or serve as a main dish with your favorite sides
