3 She usually grows her own green beans but in the past years, rabbits have become a problem. Mother is 91 and can’t handle the shot gun like she use to. 03/08/2013 Property of myhomecanning.com 3

4 In lieu of this problem, I’ve had to find alternative sources:  The grocery store  The Farmer’s Market  Or an independent grower. I’ve chosen to use the Farmer’s Market. 03/08/2013 4 Property of myhomecanning.com

5 Jars – either pints or quarts Lids – either regular or wide mouth Rings to match Large spoon or ladle Container for waste Container for prepared beans Funnel Knife Strainer Pressure canner Lid lifter Jar lifter Wet cloth 03/08/2013 5 Property of myhomecanning.com

6  First stem the green bean, removing the tail and the stem.  This is where you will need to use the knife, so be careful. Personally, I’m knife impaired. 03/08/2013 6 Property of myhomecanning.com

7  Once stemmed, then cut them into ¾ or 1 inch pieces.  Wash them using the strainer 03/08/2013 Property of myhomecanning.com 7

8 You can be creative by:  Adding onions, mushrooms, or garlic  Adding salad seasoning or other spices  Leave the beans long instead of cutting them into pieces  Pickle them, either sweet or dill. 03/08/2013 8 Property of myhomecanning.com

9  Check the rims of the jars for chips by running your finger along the edge. (Any jars with chips cannot be used.)  Wash the jars and rinse well 03/08/2013 9 Property of myhomecanning.com Rim

10  Fill the jars using the funnel and large spoon or ladle  Leave approximately ½ inch of air space  Add salt or other seasonings; ½ teaspoon for pints, 1 teaspoon for quarts 03/08/2013 10 Property of myhomecanning.com

13  Place the liner in the bottom of the canner.  Add two quarts water.  Add two tablespoons vinegar.  Place on stove. (The amount of water and vinegar used will depend on the size of your canner. Check canner instructions) 03/08/2013 13 Property of myhomecanning.com

14  Put the lids in a sauce pan with water and heat to boiling.  Wipe the rim of the jar with a wet cloth.  Fill the jar with hot water leaving ½ inch air space.  Place a hot lid on the jar.  Then put the ring over the lid and tighten. 03/08/2013 14 Property of myhomecanning.com

15  Place the jars in the canner  Your canner size will determine the number of jars you can process per batch. Mine will handle 9 pints or 7 quarts  Position canner lid and turn to seal 03/08/2013 Property of myhomecanning.com 15

16  Turn the heat on and wait until gauge reaches the desired pressure.  Adjust the heat to keep the pressure constant for the entire processing time.  When the time ends, turn off the heat and let cool until pressure is at zero. 03/08/2013 16 Property of myhomecanning.com

17  Then remove the cover and use the jar lifter to remove the jars  Place on a cutting board or a surface that can handle heat. 03/08/2013 Property of myhomecanning.com 17

18  As the jars cool you will hear the lids pop which means the lids have sealed.  If it seams like the lids are not sealing, turn the jars upside down which causes the heat of the liquid to soften the rubber on the lid to create a seal. 03/08/2013 18 Property of myhomecanning.com POP

19  Once completely cooled, write the year on the lid of each jar and store in a cool low lit area. 03/08/2013 Property of myhomecanning.com 19
