Definition of Salmonella
Salmonella are gram-negative bacilli that can cause salmonellosis, a diarrheal illness in humans. The bacteria live in the gut of infected humans and animals.

Structure of Salmonella
Salmonella are a group of closely related rod-shaped, Gram-stained negative bacteria that have flagella (tail-like structures used for movement). Salmonella species are non-spore-forming, with cell diameters between about 0.7 and 1.5 µm, lengths from 2 to 5 µm.

Most human infections are caused by eating food or drinking water that has been contaminated by feces. Foods most commonly infected are: Uncooked meat, seafood and poultry. Uncooked eggs. Fruits and vegetables.

Symptoms of Salmonella Infections
Most of the symptoms you’ll have from a salmonella infection will be stomach-related: Cramps in your stomach Bloody stools Diarrhea Cold and chills Fever Headache Sick to your stomach Throwing up

Salmonella Treatment Most Salmonella-related gastroenteritis cases resolve within 5 to 7 days without any treatment. If severe dehydration from diarrhea occurs, administering intravenous fluids may be necessary. Antibiotic treatment is reserved for severe cases of salmonella.

Preventing Salmonella Infections
You can do a lot of things yourself to help ensure the sneaky bacteria doesn’t invade your gut: Avoid eating raw or barely cooked eggs. Don’t eat raw or undercooked beef, pork, or poultry. Wash your hands well with soap and warm water before, and after, handling food.

Do not mix cooked food with raw food. Wash raw fruits and vegetables well, and peel them if possible.
