2 What would have been the problems when preparing food in the past? *
The Modern Kitchen The Kitchen has been transformed by the use of technology. Labour-saving equipment saves time and money. Some examples of modern equipment are: food processors, blenders & whisks graters, mixers & slicers bread-makers & coffee makers slow cookers, steamers & woks juice extractors & deep fat fryers health grills & pressure cookers toasters & microwave ovens. What would have been the problems when preparing food in the past? *

3 Speeding up Preparation
People have less time to prepare food. Electric food processors, mixers and blenders carry out a wide range of jobs in the preparation of food. They use electrical rather than human energy, so are quicker and often with better results. 4 How long does a food mixer take to whisk cream? *
Food Mixers Electric mixers can be hand-held or attached to a stand fitted to a bowl that can rotate. Many have a blender attachment. They are used for whisking e.g. thickening cream and making meringue from egg white, creaming ingredients together in cake making and for making dough for bread. The mixer can be moved easily to any part of the kitchen although space needs to be found for storage for a stand and bowl. They are extremely quick at whisking and mixing. 5 Blenders Another name for a blender is a liquidizer.
It is used for soup making, puréeing fruit, chopping nuts, preparing baby food, mixing batters, fruit drinks and smoothies and making caster sugar from granulated. It is a glass or plastic goblet with extremely sharp blades at the bottom which rotate rapidly. Liquids rise up rapidly and so they must not be overfilled especially when blending hot food.

6 Food Processors Food processors are efficient and produce good results. They are expensive and you would have to consider how much it would be used, the amount of cleaning involved and storage. Some have attachments to grind coffee beans, a juicer or citrus press, a blender and whisk. 7 What other labour saving equipment do you use? *
Cooking Equipment Most people cook by conventional methods using an oven, hob and grill. People also cook using a variety of equipment that save labour, energy and time. Some examples are microwave ovens, slow cookers, steamers, pressure cookers, deep fat fryers, electric frying pans and frying pans for dry frying and stir frying. What other labour saving equipment do you use? *

8 Why use Microwave Ovens
Most modern homes have a microwave oven in their home. They cook food quickly, use less electricity and are economical. Small portions can be cooked easily and there is less waste. Food can be eaten from the cooking dish avoiding washing up. They are ideal for cooking for one or two people only. Microwave meals are available to avoid preparation time. They are convenient as they can be plugged in anywhere and are safe.

9 What are Microwaves? Microwaves are electromagnetic waves similar to X-rays, light rays and heat rays. They cook food by the process of radiation. Microwaves move at the speed of light, have a very high frequency and vibrate millions of times a second. Microwaves reflect or bounce off metal walls, pass through a china, paper or plastic container and are absorbed by food. Microwaves can be reflected, absorbed or transmitted by different objects. The friction creates heat which cooks the food. When absorbed by food the molecules are agitated vibrate and cause friction.

10 Microwave Ovens Facts How should you set the microwave? *
A microwave oven is simply a metal box with a magnetron valve that generates the microwaves. The oven does not heat up. Heat is generated within the food. The power output, e.g. 500W, affects the time it takes to cook the food. The door has a safety seal to prevent leakage of microwaves. They have a heating category from A to E for the time needed to cook a small portion of food. 11 Microwave Ovens Good and Bad
Food can be cooked more quickly than in a conventional gas or electric oven. Food like this chicken may not have a good texture, flavour or colour and may be unappetising. Frozen food can be defrosted first in a microwave oven. Temperatures must be 72ºc for 2 min. to kill micro-organisms. Combination microwave ovens have a grill and convection oven. Food is not cooked evenly and may have cold spots. They are convenient where a traditional oven is not available, too big or unsafe. Cold spots can be avoided by a rotating turntable, repositioning the food, stirring and using standing time.

12 Pressure Cookers Food is cooked more quickly in a pressure cooker than by boiling food in a saucepan which saves energy. The pressure valve allows different pressures to be built up. Pressure inside the cooker raises the temperature of boiling water to 107ºc -120ºc. A control valve releases steam to prevent too much pressure. Trapped steam causes pressure to increase which cooks food rapidly. The safety valve is a back up to the control valve. A pressure cooker is made of aluminium and is thicker than an ordinary saucepan. What are pressure cookers particularly useful at cooking. *

13 Other Cooking Equipment
Other labour saving and economical equipment include: electric kettles that automatically switch off when ready automatic coffee makers that and make the desired amount slow cookers that cook food over a long time but with low fuel costs as heat is contained inside deep fat fryers that make evenly cooked food and are safe toasters that make toast quickly and avoids burnt toast health grills and sandwich toasters that cook food without using a conventional grill with good results. *
