1.Your kitchen’s complete plumbing system, including sinks, dishwashers, floor-drains and mop-sinks, drain into the grease trap or grease interceptor system. 2.Wastewater flows into either an interior or exterior (usually in-ground) grease trap system. A baffle separates the inlet and outlet of the trap, keeping grease in. 3.Grease floats to the top of the grease trap, while solids settle on the bottom. The trap or interceptor must be vacuum pumped regularly by a skilled service provider to remove the entire contents of the trap. 4.Clean water then continues to flow into your sewer or septic system. Quick Facts About Organic Waste… Quick Facts About Organic Waste… Organic food waste is the third largest portion of the waste stream in the United States, yet it is also the least recovered portion at just under 3%. Up to 75% of your waste volume and more than 50% of your disposal costs can be contributed to organic waste— produce, dairy, meats, and other foods. Study conducted by the University of Arizona claims that the country's supermarkets, restaurants and convenience stores throw out 27 million tons between them every year (representing $30 billion of wasted food). When food rots, it releases methane, a greenhouse gas which the U.S. Environmental Protection Agency (EPA) says is 20 times more damaging to the environment than carbon dioxide (CO2).
