What are Buckwheat Groats? Triangular shaped seed Hulled Can be roasted to establish a nutty flavor Gluten free alternative to other grains Nutrient composition for 1 cup cooked buckwheat groats: –Carbohydrates 11% –Protein 11% –Fat 2% –Fiber 18%

Benefits of Buckwheat Groats: Gluten free alternative to grains Provides minerals to the diet naturally: –Magnesium –Potassium –Phosphorous –Calcium Contains dietary fiber Provides some protein to diet Possibility of aiding in : –Reducing cholesterol levels –Lowering blood glucose levels

Binders Potato Starch: thickener, gluten free Potato Flour: thickener, gluten free flour alternative Guar Gum: thickener, stabilizer, water binding property, and helps emulsify

Trial Two Ingredients: 20g Potato starch 20g Corn starch 10g Guar gum 1 cup Buckwheat groats (measured uncooked) 1/2 cup Shredded carrot 1/2 cup Finely chopped onion 1/2 teaspoon ground cumin 1/2 teaspoon Salt 1/2 teaspoon Pepper 1/2 teaspoon Garlic powder Canola Oil for frying Procedure: Boil buckwheat groats then combine with gum, starches, garlic, salt, and pepper. Saute onions and carrots. Add cumin. Combine all ingredients together and form patties Cook patties in frying pan

Trial Three Ingredients: 2 cups cooked buckwheat groats 1/2 tbs cornstarch _ tbs potato starch _ potato flour 1/4 cup chopped onion 1 tbs water 1 tsp parsley flakes Procedure: Combine all ingredients in a mixing bowl Form patties Place in a frying pan and cook for 3-4 minutes on each side or till brown

Final Recipe Ingredients: 74 g Buckwheat groats, cooked 32 g onion, minced 24 g water 1.9 g garlic powder with parsley.5 g salt.5 g ground black pepper.5 g chili powder.4 g parsley flakes 2.4 g vegetable bouillon 35.8 g potato flour 4.7 g potato starch 2.2 g guar gum 4 g canola ol for pan cooking
