Tonight’s Items: BBQ Chicken Coleslaw Baked Beans (Reduced Sugar & Calories)

2 BBQ Chicken Ingredients: 6- 4oz Skinless, boneless chicken breast
1oz Smokey Rotisserie Seasoning (*low sodium) 2 Tbs garlic, finely chopped 3 Tbs BBQ sauce (sub: Walden Farm BBQ) 1 Tbs Grapeseed oil Freshly ground pepper to taste Directions: Combine chicken, seasoning, chopped garlic, BBQ sauce, oil, salt, and pepper in a large bowl. Mix and coat chicken well. Cover chicken and marinate in refrigerator for at least 30 minutes. Cook on a hot grill or in a sauté pan to an internal temperature of 162* degrees. Let chicken rest for 5 min while it continues to cook *overcooked Chicken is dry and chewy. 3 Coleslaw Ingredients: ¼ bu. Cilantro, coarse chopped
1 Cup Green onion, sliced on a bias 1 bag Coleslaw mix 1 tsp Lime juice and zest of 1 lime 1 ea. WF Coleslaw dressing Tools: Large bowl Slotted spoon/ tongs Cutting board and knife Directions: 1. Cut cilantro, onions and add coleslaw mix to a large bowl 2. Toss to incorporate, add lime juice and zest, toss once more 3. Finally toss in WF coleslaw dressing. Allow to set for at least 30 min, continually tossing to incorporate flavors. 4 Baked Beans Ingredients: 3 cans pinto beans, rinsed & drained
1 medium yellow onion, diced 3 garlic cloves, minced 1 tablespoon smoked paprika ½ teaspoon chipotle chili powder ½ teaspoon sea salt 2 tablespoons apple cider vinegar 2 tablespoons balsamic vinegar 2 tablespoons Walden Farms maple syrup * 1 tablespoon Truvia (or sugar-free substitute) 1 cup tomato sauce 2 tablespoons tomato paste 1 cup water Directions: Add all ingredients to a crockpot and cook on low for 6 hours, until beans are tender and sauce is thick.
