Veggie Pizza w/ Cauliflower Crust Carmichaesl Elementary Center Carmichaels, Pa Recipe Ingredients: Cauliflower 1 head 2/3 C Fresh Baby Spinach Cooking Spray 2 Tsp Olive Oil ½ Cup Sliced Cremini Mushrooms ½ Cup Sliced Red Bell Pepper ½ Cup Thinly Sliced Fresh Basil 1/8 Tsp Kosher Salt 3 Cloves Garlic minced 2.5 oz Shredded Part Skim Mozzarella 2 large egg whites .5 oz grated parmesan ½ Thin Sliced seed tomatoes Insert high-quality picture of the winning recipe here. MUST be on the black plate we provided. Preparation Method: Preheat Oven 375 Pulse the all of the cauliflower through a food processor 10 to 15 times or until finely chopped like rice. Transfer the cauliflower to a baking sheet lined with parchment paper. Flatten the cauliflower to the pan. Coat Cauliflower with cooking spray. Bake the cauliflower at 375 for 25 minutes stirring once. 3. Heat a large skillet over medium to high heat. Add 1 tsp of Olive Oil to pan to coat. Add the Mushroom and Bell Pepper. Sauté for 5 minutes or until tender. Set aside. 4. Place cauliflower in clean kitchen towel. Squeeze until dry. Combine cauliflower, remaining 1tsp Olive oil, black pepper, salt, garlic, egg whites and parmesan cheese in a bowl. Press cauliflower Mixture into 2 8’’ circles on a baking sheet lined with parchment paper. Coat crusts with cooking Spray. 5. Bake crusts at 450 for 22 minutes or until brown. Remove from oven. Top crusts evenly with mushrooms, tomatoes, Peppers, spinach, basil and mozzarella cheese. Bake additional 7 minutes or until cheese is melted.
