NATIONAL DISHES AND FOOD Every country has its own traditional dishes. The food of people in Karachay-Cherkessia is very similar. Its base is meat, diary products and cereals. The well-known shashlik (fried meat ) is prepared by all people of Karachay-Cherkessia. Staying close people of all the nationalities prepared almost the same dishes: “manty” - pieces of paste containing meat, “plov” – from rice and meat, "kazi" - horse sausage, kuvurmash (fried horse sausage), beshbarmak, karachay sausage - “kyima”. The most popular dishes are cherkess “libzha”, karachay “sokhta and jyorme” Famous karachay “khichins” are known in all big towns of Russia. The traditional occupation of people in Karachay-Cherkessia is farming and cattle-breeding. Some villages cultivate particular sorts of tomatoes, cabbages, potatoes, onions, carrots, etc. That’s why there are many dishes from vegetables. Vegetable dishes are typical for people in the region.

Shorpa The most popular dish in Karachay-Cherkessia is shorpa with tusluk. The main products are meat, potatoes.

Karachay “khichins” Speaking of different types of baked goods, it is impossible not to mention the traditional products, which are widely used karachay people as holiday and everyday dish. A special place occupy " khichins “. They are prepared from paste with meat or potatoes. Famous karachay “khichins” are known in all big towns of Russia.

Shashlik The well-known shashlik (fried meat) is prepared practically by all people of Karachay-Cherkessia.

AIRAN The milk was used to make cheese and airan (a kind of yoghurt) - an amazing drink. Not only does it quench thirst, but it was often a staple food. In very hot weather, it was diluted with water and used as a refreshing drink «susab». AIRAN could be salted down for the winter eventually eaten in solid form (tuzluk), or as a condiment for other dishes, or diluted, as a substitute for tea. Doctors knew by the turn of the century that airan is a valuable tonic and medicine. It was found ideal for convalescents and especially in the treatment of tuberculosis and gastro-intestinal diseases, since it destroys harmful bacteria in the system and aids digestion. It was considered good for the complexion and capable of prolonging life. Today, airan is manufactured on an industrial scale and is immensely popular.  

Very popular dishes are cherkess “libzha”, karachay “sokhta and jyorme”

Kalmyk TEA Kalmyk TEA. It is made of water, tea, and sour-cream with salt. We drink tea with pepper, cheese and house-bread, for celebrations lyakum, katlama, byorekle.

There is a very good tradition, that guests are greeted at the border in their national costumes and treat such traditional dishes as airan.
