Sichuan Cuisine This cuisine originating from Sichuan Province in southwestern China, is the most widely served cuisine in China.

Features of Sichuan Cuisine The main feature of Sichuan Cuisine is Hot and Spicy and the flavour of the Sichuan pepper. Many of the dishes are full of spices. Featured seasonings, include garlic, chilli pepper, Sichuan pepper, star anise, broad bean chilli paste and shallots.

History of Sichuan Cuisine The origin of Sichuan Cuisine can be traced back to Qin and Han empire ( 221 BC – 220AD ). As a unique style of food, Sichuan cuisine was famous more than 800 years ago during the Southern Song Dynasty ( ) when Sichuan restaurants were opened in Lin'an, now called Hangzhou, the capital. The hot pepper was introduced into China from South America around the end of the 17th century. Once it came to Sichuan, it became a favoured food flavoring. In the late Qing Dynasty around 19th century, Sichuan cuisine became a unique local flavour, enjoying the same reputation with Shandong, Guangdong (Canton) and Huaiyang cuisines. In Sichuan, there is high humidity and many rainy, overcast days. Hot pepper helped reduce internal dampness, so it was frequently used. This is why hot spices are a main feature of the cuisine.

Interesting Story about Fuqi Fei Pian (Husband and Wife lung slices) There is a romantic story of the origin of this famous Sichuan dish. Guo Zhaohua (the inventor) and his wife sold their vinegar-ised beef slices by trundling a small cart along the street. Their beef slices were very delicious, and no one could resist the charming smell in that street. People liked the food made by this couple very much, so they gave it the name Husband and Wife Lung Slices in honour of the couple.

How to make Fuqi Fei Pian Ingredients 1 lb. fresh beef 1 lb. beef offal (heat, tongue, tripe) 1 lb. Chinese gravy Spices: 1 tsp Sichuan peppercorn 2 aniseeds (5 g) 1 slice cinnamon (5 g) Sauces : 8 tbsp salt 1 1/2 oz. whit wine 14 oz. water Topping sauce: 5 oz. chili oil 5 oz. soy sauce 5 tsp Sichuan peppercorn powder Garnishing: 3 1/2 oz. sesame seeds/sesame powder 5 oz. peanuts, roasted, chopped Coriander, as needed Directions 1.Rinse beef and beef offal, cut the meat into chunks, put into a big pot, add water just enough to cover the meat, heat to a boil at high heat, continue cook until color turn white red, and remove any sundries. 2.Remove, wipe out pot, add beef meat back, and combine the gravy, spices and sauces Heat for 30 minutes at high heat after boiling, and then simmer for about 90 minutes at low heat until soft and tender. 3.Remove with strainer, cool outside for a while. For the topping sauce: spoon out 1/2 lb. the gravy (sauce in the pot), mix with chili oil, soy sauce and Sichuan peppercorns powder, and heat to hot in a pot. 4.After the puqi feipian recipe is cool enough, cut into 1 1/2 inch long, 1 inch wide and very thin pieces. Whisk around with the topping sauce to well mix, garnish the dish with peanut, sesame seeds powder and coriander.

Australian food VS Sichuan food Australian people eat a lot of meat traditionally cooked from indigenous culture. In Australian cuisine meat is used in almost every cuisine especially bacon and pork. Meat is BBQ in Australia cuisine. Potato is a famous vegetable used in meals in Australia. Australians don’t use the right amount of vegetables in there cuisine. Rice, Noodles, vegetables and herbs and seasoning are used in Chinese Cuisine everyday. Chinese cuisines are eaten in Asian nations. Each province has a different Cuisine based on there culture and people living. Chinese people drink herbal tea and milk with a cuisine.

In your opinion, is the cuisine healthy? Why or why not? I think this cuisine is not healthy because it has lots of oil involved and its really spicy which is not good foe your health.
