INGREDIENTS: 3 cups rolled oats, 1 cup cooked millet, 600 ml pineapple juice, 2 cups dates, chopped, 1/2 cup almonds chopped, 1/2 cup walnuts, chopped, ¼ cup olive oil pinch of salt 1 teaspoon lemon peel or cinnamon SERVINGS: 32 ( serving size= 2 bars, total= 64 bars) PREPARATION: Mix the liquid ingredients, then add the rest of the ingredients. It will result a thick mixture. Spray cooking oil in two rectangular pan (24 x 27/28 cm) and spread evenly the composition. Cook in the oven at 250 degree F for 35 minutes. INGREDIENTS: 150 g dried apricots, chopped 1 cup pineapple fruit, chopped 1 cup walnuts, finely chopped 2 cups rolled oats 1 cup cooked barley 1 cup raisins 1 cup water ¼ cup vegetable oil pinch of salt 1 teaspoon cinnamon SERVINGS: 32 ( 2 bars for person, total 64) PREPARATION: Soak the raisins in the water for 5-6 hours, then blend them for getting a paste. In a large ball put that paste together with all the ingredients and mix them for having an even distribution. Spray two cooking pan (rectangular shape: 24 x 27/28 cm, and spread the mixture in order to get a layer of less than 1 inch. Cook in the oven at 300 degree F for 30 min. INGREDIENTS: 2 medium bananas 2 tablespoons of peanut butter 50 g raisins 2 tablespoons carob powder, raw 2 teaspoons lemon juice ½ teaspoon lemon peel pinch of salt SERVINGS: 12 PREPARATION: Blend bananas with raisins and lemon juice. Add the rest of the ingredients and continue to blend for a fine texture. That mixture, if put in special shapes in the freezer can be served as ice- cream alternative. INGREDIENTS: 1 cup of pitted dates (40 dates) 1 cup water 1 cup walnuts, milled 1 cup walnuts, coarsely chopped 1/2 medium lemon (juice and peel) 2 tablespoons carob powder, raw pinch of salt 1 cup of coconut finely shredded, optional SERVINGS: 35 PREPARATION: Soak the dates in water for 6-8 hours. Blend them, then add the milled walnuts, carob powder, salt, and lemon. Continue to blend for a fine cream. Add the resting walnuts and mix by hand. Use the portion scoop ( 1 tablespoon) for making balls. Roll them through coconut finely shredded. INGREDIENTS: Layers: 20 g yeast, 40 g sugar, 3/4 cup water, 3 tablespoons olive oil, 1 teaspoon salt, 4 cups flour (whole wheat, preferably) Filling: 4 cups of blackberries, 3 tablespoons of corn starch, 1 cup of raisins, pinch of salt SERVINGS: 20 PREPARATION: For layers, see Plums Hazelnuts Roll. For filling: have 3 cups of blackberries blended with corn starch. Cook that mixture on the low temperature, stirring continually in order to get a jelly mixture. Spread this on the unrolled dough and put over the jelly the remaining blackberries and raisins. Make a roll. For baking, see Plums Hazelnuts Roll. INGREDIENTS: ½ cup sunflower seeds 1 cup raisins ½ cup water 1 tablespoon lemon juice 1 teaspoon lemon peel pinch of salt SERVINGS: 11 PREPARATION: Soak the raisins in the water for 5-6 hours. Blend them until getting a fine paste. Separately, mill the sunflower seeds. Add them to the paste, together with all other ingredients and blend for having a fine texture. Use this dessert for topping biscuits, or just simply as spread for bread. INGREDIENTS: 1/3 cup dry soy beans, 2 cups water, 6 dates, ¼ teaspoon salt, ½ teaspoon vanilla, 4 cups water SERVINGS: 5 PREPARATION: Cover soy beans with plenty of water and let soak for 8-12 hours. Drain and rinse soaked soybeans, place in a kettle and cover with water. Bring to a boil and simmer for 10 minutes. Drain and rinse the boiled soybeans. Again cover with water, bring to a boil and simmer 10 more minutes. Drain and rinse again. Now beans are ready to blend into milk. ( Boiling, draining and rinsing two times reduce the strong soy beans taste). Blend 1 cup of ready –to – blend soy beans with the remaining ingredients in a blender with enough cold water to keep beans moving. Blend for several minutes until smooth. Add remaining water to make 5 cups of milk. Optional, strain through cheesecloth. Chill and serve or use in cooking. Hint: 1/3 cup of dry soy beans becomes 1 cup of soaked soy beans. Make 1 1/4 liter of milk. 1 cup of dry soy beans becomes 3 cups of soaked soy beans. Make 3 ¾ liters of milk. Courtesy of Mss. INGREDIENTS: 1 cup sesame seeds 4 cups water 5 dates pinch of salt ¼ teaspoon vanilla extract SERVINGS: 5 PREPARATION: Mill the sesame seeds and then transfer them in blender. Add 1 cup of water, dates and salt and blend until the dates get dissolved. Add the rest of the water and continue to blend at a high speed until liquefied. INGREDIENTS: 1 cup of almonds 4 cups water 5 dates pinch of salt ¼ teaspoon vanilla extract SERVINGS: 5 PREPARATION: Grind the almonds and transfer the powder in a blender. Add 1 cup of water, dates, salt and vanilla extract. Blend until the dates get dissolved. Add the remaining water and blend at high speed until liquefied. INGREDIENTS: 1 cup water ½ cup rolled oats pinch of salt 2 teaspoons flaxseed, milled SERVINGS: 1 PREPARATION: Bring the water to boil and then put the rolled oats to cook at a low temperature, stirring continually, until the oats get soft. INGREDIENTS: 1 cup barley, cooked 1 cup millet flour 280 ml water (1cup and 2 tablespoons) 1 tablespoon olive oil 1/3 teaspoon salt 3 tablespoons corn starch ½ teaspoon vanilla extract 1 teaspoon lemon peel, grated SERVINGS: 6 PREPARATION: Blend all the ingredients until getting a very fine creamy texture. Preheat waffle iron. Pour mixture into preheated waffle iron and close the lid. Bake until steam stops rising. Remove and place on a cooling rake. Make 6 large waffles 9 x 11 cm.
