10 Many People Do No Get Enough Vitamins and Minerals Most often vitamin and mineral deficiencies in people in less-developed countries Iron  too little can lead to anemia Vitamin A  too little causes poor vision – Golden rice  genetically modified to include beta-carotene (vitamin A) Iodine  too little leads to stunted growth, retardation, and goiter (swollen thyroid)
