1 Christmas dinner. Hope you enjoy. This is a presentation about the typical dishes we eat for Christmas. Hope you enjoy.

2 Let’s start with the appetizers. Broccoli affogati: For 4 people, preparation time:30, cooking time: 25 minutes, ready in 55 minutes.

3 Ingredients: 800 grams of broccoli, 3 salted anchovies, 100 grams of black olives, 2 onions, Black pepper(powder), Olive oil ½ a glass of red wine, some salt.

4 Let’s cook! Step 1: Wash the broccoli from all the leaves and cut into little pieces. Step 2: Put in the pan:The broccoli, washed and boned anchovies, the olives without the core and the chopped onions. Step 3: Add the salt and give the mixture a good stir so all the ingredients are “flavoured”, then add the olive oil and the black pepper. Step 4: Cook at low heat for 20 minutes, add the red wine and continue to cook (add a little bit of water) and turn of the heat.

5 Mbriulate siciliane. Ingredients. 200 grams of semolina flour, 150 grams of “00” flour, 3 spoonfuls of olive oil, 20 grams of brewer’s yeast, milk, salt, 3 little potatoes, 150 grams of minced beef, 150 grams of minced pork, 1 little onion, 6 black olives without core, 4 spoonfuls of pecorino cheese, olive oil, salt, pepper.

6 Let’s cook! Step 1: Mix the flour with: oil, brewer’s yeast, salt and some milk. Add as much milk as needed to give the dough a good consistency. While kneading use some hot water to help. When the dough is ready leave it rest for 30 minutes. Step 2: Peel the potatoes and cut them vertically, fry them with some salt and oil. Mix the pork and meat and add some pepper and salt. Now you can knead the dough with a rolling pin. Step 3: Add some oil to the dough and add on top the potatoes, then the meat, the olives, the onions. Cook everything in the oven for 40 minutes at 180º degrees.

7 Now, the first dishes. Ravioli agli scampi. For 4 people. Ingredients: 4 scampi, 2 red shrimps, Ravioli filled with grouper, White wine, Chopped pistachios, 2 onions,olive oil, salt, pepper.

8 Let’s cook! Wash the scampi and the shrimps, and fry the shrimps. Take a pot and pour some water with the white wine. Dip the scampi and then cut them. Cut the onions, take a pot and add some oil and then the onions and cook at a low heat. Mix everything and then add the shrimps and scmapi. After mixing everything you should have a sauce to add to the ravioli(ravioli need to be cooked).

9 Anelletti alla siciliana. For 6 people, preparation time:30 minutes.

10 Ingredients: 500 grams of anelletti, 4 black eggplants, 1.5 liters of tomato sauce, 500 grams of beshamel, 200 grams of ham, 600 grams of mozzarella, 4 boiled eggs, Breadcrumbs and grated pecorino cheese.

11 Let’s cook! Step 1: Cut the eggplants lenghtwise, put them in water, let them dry and fry. Step 2: Pour oil on the frying pan so that the breadcrumbs can stick really well. Step 3: Put the first layer on a baking dish and put the ham, mozzarella and then the pecorino cheese, then cover everything with the rest of the layers. Step 4: Put in the oven for 25 miutes at 180º degrees.

12 Now the second dishes. Capretto al forno con patate. For 4 people, preparation time:3 hours, cooking time:45 minutes, ready in 3 hours and 45 minutes.

13 Ingredients: Little goat, Rosemary, Garlic, Origan, Oil, Vinegar, Potatoes, White wine, Salt.

14 Let’s cook! Step 1: Buy a piece of a little goat with ribs and chop it in little pieces, put it in a mixture of water and vinegar, some garlic and rosemary. Step 2: Leave it in there for some hours until the flavour of the goat goes away. Step 3: Then take a baking sheet and pour the oil, some rosemary, heat the oil and then pour it on the meat, on the baking sheet where you’ll fry it.

15 Step 4: Meanwhile add some origan, salt and some white wine. Step 5: Meanwhile clean 4-5 potatoes and cut them in thin strips. After the meat is fries, add the potatoes, give everything a good stir and add some salt if you need to. Step 6: Put in the oven for more than 30 minutes.

17 Now…THE DESSERTS! We showed you how to prepare 2 appetizers, 2 first dishes and even 2 second dishes…hmm…Something is missing… THE 2 DESSERTS!! Let’s go!

18 Buccellato For 6 people, preparation time:an hour,cooking time:30 minutes, ready in an hour and a half.

19 Ingredients: 300 grams of flour, 125 grams of butter, 50 grams of sugar, 300 grams dried figs, 300 grams of raisins, A spoonful of Marsala, 50 grams of chopped walnuts, 30 grams of pine nuts, 30 grams of candied orange peel, Coloured confetti, 3 cloves, A pinch of pepper.

20 Let’s cook! Step 1: In a bowl put the flour, butter, sugar and Marsala and knead the mixture with your hands until the dough is smooth, then let it set under a cloth for an hour, then knead the dough again with a rolling pin. Step 2: Put the figs, raisns, walnuts, pine nuts, orange peel, sugar and and a pinch of pepper in a mixer and mix. Step 3: With the rolling pin knead the dough in a rectangular shape, put the filling, close and roll, giving it a doughnut shape.

21 Step 4: On the top make little incisions, spread the egg yolk, put in the oven (already set at 180° degrees) for 20 and 30 minutes. Step 5: Let it set, then decorate with icing sugar, pistachios, confetti and candied fruit.

23 Paste di mandorla. Ingredients: 1 kilogram of peeled and chopped almonds, 1 kilogram of sugar, A spoonful of honey, 4 egg whites, Some cinnamoan, Lemon peel, Candied cherrie(red or green).

24 Let’s cook! Step 1: Start stiring the almonds and sugar together, then slowly add the other ingredients. Knead for a long time. Leave the dough to rest for 3 hours. Step 2: Make the biscuits and put the candied cherries on top. Put in the oven (already set to 200°) for 7 minutes.
