1 Piparkūkas Gingerbread Spain, Logrono 25 March – 30 March, 2014

2 The spices, which are in grains, we blend in a blender, grinder or a mill.

4 Take 500 grams of flour and sift them through a sieve in a bowl. Add the spices and mix it all together. To other 500 grams of flour add 1,5tsp. of cooking soda and mix.

5 Then it’s time for the malt preparation. Take an average sized pot, pour the malt in it, add 200 grams of butter and 300 grams of sugar. Put it on a small fire and heat it up until the butter and the sugar have melted

6 When the paste has been warmed up and the butter and the sugar are completely melted, take it off the fire and pour 500 grams of flour with the spices in it. Pour the flour slowly, intensively stirring the malt. A bewitching aroma will take over. Mix it in a congeneric paste and let the dough cool off.

7 The dough has to be cold or at least tepid. Make a kind of a circle on the table from the flour. Put the tepid dough into the circle and let it cool off for just a moment.

8 Then it’s time to brake it. Slowly, with no rush roll it in the flour. Make a small hole in it and hit two eggs in it. Pour a little bit of flour on it and start to neatly brake it, pouring the rest of the flour in after a while. Brake it in a smooth and congeneric mass!

9 The procedure

10 The gingerbread dough is ready. Now all you have to do is split it in portions, wrap it in follium or food film and keep it in the refridgerator for approximately 2-3 weeks.

11 Then roll the dough out! Rolling!

15 Easy recipe for gingerbread This easy recipe for gingerbread men is great for baking with children, and it makes a lovely homemade Christmas present.

16 Ingredients 350g/12oz plain flour, plus extra for rolling outplain flour 1 tsp bicarbonate of sodabicarbonate of soda 2 tsp ground gingerground ginger 1 tsp ground cinnamoncinnamon 125g/4½oz butterbutter 175g/6oz light soft brown sugarbrown sugar 1 free-range eggegg 4 tbsp golden syrupgolden syrup

18 Preparation method Sift together the flour, bicarbonate of soda, ginger and cinnamon and pour into the bowl of a food processor. Add the butter and blend until the mix looks like breadcrumbs. Stir in the sugar. Lightly beat the egg and golden syrup together, add to the food processor and pulse until the mixture clumps together. Tip the dough out, knead briefly until smooth, wrap in clingfim and leave to chill in the fridge for 15 minutes. Preheat the oven to 180C/350F/Gas 4. Line two baking trays with greaseproof paper. Roll the dough out to a 0.5cm/¼in thickness on a lightly floured surface. Using cutters, cut out the gingerbread men shapes and place on the baking tray, leaving a gap between them. Bake for 12-15 minutes, or until lightly golden-brown. Leave on the tray for 10 minutes and then move to a wire rack to finish cooling. When cooled decorate with the writing icing and cake decorations.
