Shortbread Recipe Ingredients: 250 grams of gluten free flour 250 grams of butter 125 grams of cornflour 125 grams of icing sugar Caster sugar for dusting Method: 1. Pre-heat the oven to 180/355F or Gas Mark 4. 2. Mix all the ingredients gently until the mixture comes together. 3. Knead lightly, cover with cling film and put in the fridge for 1 hour. 4. Knead the mixture a little bit after taking it out of the fridge. 5. Roll it flat to 1.2cm thick. 6. Use the cutter to cut shapes. 7. Put onto a baking tray and prick lightly with a fork. 8. Bake until golden brown. 9. Take out of the oven and let the shortbread cool a little bit. 10. Sprinkle lightly with castor sugar.
