2 Christmas Soup This is a soup that we, in Portugal, usually eat all year, but in christmas this soup becomes special, with more ingredients to give it a special taste of christmas. During the year we call it Canja, but in Christmas its called Canjinha de Natal.

3 Ingredients: 1 cup of 1st quality rice 1 small onion 500 grs of smoked sausage 1 chicken Some mint leafs Chickens liver, gizzard and kidney at your taste oil: at your taste 5oo grs of sliced bread 1 piece of ham

4 Christmas Chicken Soup (Canjinha de Natal) Preparation: Take the skin out of the chicken, cut him pieces and boil it in salted water with two mint leafs along with the ham, the peeled onion, the smoked sausage and the chicken kids, Let it boil until the meats are really tender. Drain them well in a stainer and save them. Take the broth to the flame with the rice well washed and let it boil until the rice is opened. Unweave the chicken, eliminating all the bones and the mint and cut the remaining meat in little pieces. Cut the sliced bread in slices and eliminate the crust. Cut little slices of the bread pith in stars shape and fry them very hot oil till its golden. Drain them well and put them in absorbent paper, to absob the oil well.Join the meats with the rice broth, serve it in deep plates and decorate each one of them with a little mint leaf and the little fried bread stars.
