3 Country Potato Salad 3 ea. Red Bliss or russet Potatoes- Large dice ( Boil) 2 slices bacon-(Fry and reserve fat) ½ cup Mayonnaise ¼ cup Sour Cream 1 celery stalk (Diced) 2 each Green Onion (Diced) Salt & Pepper to taste 1.Fry bacon and reserve bacon fat. 2.Place the potatoes in water and cook for 15-20 minutes or until tender. 3.Cool in refrigerator for 10 minutes (optional) 4.Toss the ingredients together. Serve

4 Dressing 2 T. Peppercini Juice 1 tsp chopped Garlic 1 T. Parmesan Cheese ½ tsp Italian Seasoning 3 T. Olive Oil 1 T. Water Salt & pepper to taste 1.Combine all ingredients and mix well

7 Corn Bread 5 oz. milk 1 large egg-lightly beaten 3 oz. vegetable oil 1 ½ T. butter –melted ¾ cups all-purpose flour 3 oz. Granulated sugar 1/4 cup Yellow cornmeal ½ T. baking powder ½ tsp. salt 1.Preheat oven to 350 F. 2.Grease a half 2 inch pan 3.In the kitchen Aid mixing bowl add milk, beaten eggs, vegetable oil and butter and mix. 4.Combine Flour, sugar, corn meal, baking powder and salt in medium bowl. 5.Add the flour, sugar corn meal, baking powder and salt to the egg, milk, oil mixture 6.Mix till smooth 7.Bake for 18-25 minutes till golden brown and toothpick comes out clean

8 Chili Beans ½ pound ground beef ½ onion, small dice ½ green bell pepper, small dice 2 cloves garlic, minced 1 T. tomato paste 14 oz. whole tomatoes with their juice, broken up ½ T. ground cumin ½ tsp. dried oregano ½ tsp. salt 1 pinch fresh-ground black pepper 3/4 cups drained and rinsed canned pinto or kidney beans Method 1.In a large saucepan, add the ground beef and cook, stirring, until the meat is no longer pink, about 5 minutes 2.Add the onion, bell pepper, and garlic and cook, stirring, until the vegetables start to soften, about 10 minutes. 3.Stir in the tomato paste and cook for 2-3 minutes 4.Stir in the tomatoes, cumin, oregano, salt, and black pepper and beans bring to a simmer until the vegetables are tender and the chili thickened, about 5 minutes.
