2 500 gr flour 15 gr salt 25 gr brewer’s yeast 250 gr water 4 spoons of oil basil pureed tomatoes oil mozzarella wurstel black olives

3 Pour the flour into a bowl, add salt and brewer’s yeast. Slowly pour tepid water mixed with oil and work trying to dissolve lumps of flour until you obtain a very soft and elastic dough. Leave the dough to rise about two hours. Roll out the leavened dough into a non-stick and greased baking-tin. Perforate the dough with the fork and stuff as you like. For example with basil, pureed tomatoes, mozzarella, wurstel, black olives.

4 Preheat the oven (250 C°) and cook pizza about 15 minutes according to its thickness.

5 Pizza is a symbol of the Italian tradition and, as all the most famous dishes, it hides a curious history. Naples is the place of the first true pizza was born. The first versions of pizza with tomatoes was topped with garlic and oil, or mozzarella and salty anchovies. The most important event in the history of pizza is represented by the visit the Savoia Royal Family in the summer of the 1889. The king Umberto and the Queen Margherita spent a brief period of holidays in Naples. The news was really important. A little secret was disclosed to the queen: pizza had the colours of the national flag, with mozzarella, tomato and basil. From that moment pizza was called "Margherita”, in honour of the Queen.
