5 Wheat Our Daily Bread Wheat has been a staple in the diet for centuries. Many are critical that we would give wheat such a bad name but the wheat we are eating today is not what our ancestors ate. In the books “Wheat Belly” by William Davis, MD and “Grain Brain” by David Perlmutter, MD there is much discussion about how the wheat we have today is affecting our health and contributing to not only problems with digestive system health but common diagnoses like diabetes, heart disease, obesity, autoimmune disorders, neurologial and cognitive issues and alzheimers.

Genetic differences generated via thousands of human-engineered hybridizations over the last 50 years make for substantial variation in composition, appearance, and qualities. Wheat gluten proteins undergo considerable structural change with hybridization. Wheat has been modified by humans to such a degree that modern strains are unable to survive in the wild without human support. No animal or human safety testing was conducted on the new genetic strains that were created.  So intent were the efforts to increase yield, these products were released into the food supply without human safety concerns being part of the equation.

7 Effects of “Modern” Wheat on Health
Dominant source of gluten protein in our diets Damage gut lining – makes lining permeable – leaky gut Non-celiac gluten sensitivity Celiac disease Wheat starches = complex carbs – high glycemic index (GI) rapid increase in blood sugar - GI whole grain bread: 72, white bread: 69, Mars Bar: 68, Shredded Wheat cereal: 67, table sugar: 59, Snickers bar: 41. Fiber content minimal / does not offset ill effects Wheat, by a considerable margin, is the dominant source of gluten protein in the human diet. The most dramatic evidence of failed adaptation to wheat is celiac disease, the disruption of small intestinal health by wheat gluten. It is impossible to talk about the effect of wheat on health without talking about celiac disease. Not having celiac disease at age 25 does not mean you cannot develop it at age 45 and it is increasingly showing itself in a variety of new ways besides disruption of intestinal function. The connection between celiac disease and wheat consumption was first made in 1950’s. Eliminating gluten cured people with celiac disease. About 1% of the population is unable to tolerate wheat gluten, even in small quantities.  The lining of their small intestine breaks down from it, leading to cramping, diarrhea and yellow-colored stools that float in the toilet bowl because of undigested fats. 50% experience: cramping/diarrhea/weight loss; the other 50% experience: anemia, migraine headaches, arthritis, neurological symptoms, infertility, short stature, depression, chronic fatigue; or later in life as neurological impairment, incontinence, dementia, gastrointestinal cancer. The increase in celiac disease has been paralleled by an increase in type 1 diabetes, allergies, and autoimmune diseases such as multiple sclerosis and Crohn’s disease. The protein of wheat gluten makes the intestine permeable, allowing various components of wheat to gain entry into the bloodstream. When foreign compounds get into bloodstream you may develop allergies or autoimmune disorders. Autoimmunity, your body’s immune system attacking healthy organs. Conditions associated with celiac disease: Dermatitis, liver disease, autoimmune diseases, diabetes, neurological impairment, nutritional deficiencies. Glucose is unavoidably accompanied by insulin, the hormone that allows entry of glucose into the cells of the body, converting the glucose to fat. The higher the blood glucose after consumption of food, the greater the insulin level, the more fat is deposited. The acceleration of obesity started in the mid-eighties, during this time, the cornerstone of all nutritional directives was “Eat more healthy whole grains.” The low-fat, more-grain message is enormously profitable for the processed food industry.  It triggered an explosion of processed food products.

9 Learning to correctly read the nutrition panel is important as calories list are per serving size and that is often much less than we would think. The calories listed = 190 but that is for only ¼ cup of nuts.

10 Not that I would ever recommend a child be given pop-tarts but this is a good example of misunderstandings as the calories are for only 1 pastry; not the 2 that come in a pouch.

12 GM Soybeans Soybeans: Soy flour, soy oil, lecithin, soy protein isolates and concentrates. Products that may contain genetically engineered soy derivatives: vitamin E, tofu dogs, cereals, veggie burgers and sausages, tamari, soy sauce, chips, ice cream, frozen yogurt, infant formula, sauces, protein powder, margarine, soy cheeses, crackers, breads, cookies, chocolates, candies, fried foods, shampoo, bubble bath, cosmetics, enriched flours and pastas. This is a list of the most common foods and everyday products that contain soy and since most of our soy is genetically modified unless it says “Non GMO” the product most likely has GM soy in it.

13 GM Corn Corn: Corn flour, corn starch, corn oil, corn sweeteners, syrups, corn solids, maltodextrin Products that may contain genetically engineered corn derivatives: vitamin C, tofu dogs, chips, candies, ice cream, infant formula, salad dressings, tomato sauces, breads, cookies, cereals, baking powder, alcohol, vanilla, margarine, soy sauce, tamari, soda, fried foods, powdered sugar, enriched flours and pastas. This is a list of the most common foods and everyday products that contain corn and since most of our corn is genetically modified unless it says, “Non GMO” the product most likely has GM corn in it.

14 I say…to make it easier for you, all these products contain GM corn, most contain GM soy and they all contain wheat.
