2 THINGS TO COVER…  Look at the ACI File and how it is used  Look at an ACI Menu and how it is used  Examples at UGA and UCLA

3 ACI FILE  ACI stands for Average Consumption Items  Accounts for all of the items served but not detailed in Cycle Menu or Standard Menu Examples:- Cereal - BIBS - Condiments  Location\Folders\Average Consumption Items

4 ACI FILE Three tabs: Patron Count, Detail, Use Switches Patron Tab Enter Average Weekly Patrons

5 ACI FILE Detail Tab Enter items, inventory or recipe, and Average Weekly Usage of each item Note: If you add Menu Categories for each item, reporting by categories can be determined

6 ACI FILE Use Switches - Enter “1” for meals that item will be served - Enter “0” for meals that item will not be served

10 ACI FILE – ONE PROBLEM… FoodPro Product and SQL Data Extract grab Recipes from Cycle, Standard, and ACI Standard Menus Also, the FoodPro Web Product and SQL Data Extract ‘behave’ differently (More to come on that) It is not displayed on the Website for nutritional analysis – this is where ACI Menu comes in!

11 ACI STANDARD MENUS/’MOCK’ MENUS Used to display ACI Items on the website with Nutrition Information  What I call ‘Window Dressing’ – you can be as granular as you want to be  Splenda Packets  Oregano People want more information…if you’re counting calories or adhering to a specific diet, kids/people want to know all nutrition info they can – mobile web app helps at point of service *ACI Seasons drive production*

15 ACI MENUS – STEP 3 (CONTINUED) Web Preferences Options: FoodPro Product: All options used for regular menus apply to ACI Menu You can program different ACI Menus for each location SQL Extract: Display Meal Name works Days to Display works All nutritive information is pulled & displayed Short and Long Menu display feature doesn’t work AIS can speak to this a little better than me…the data is grabbed by our in house web product once it exports

18 ALTERNATIVE USE: WEEKLY ROTATIONS  Use ACI menu to display entire weekly rotation of items, independent of menu date  Used at UCLA’s quick- service restaurants for daily specials, soup-of-the-day  Mix with “regular” menu items  Requires “double entry”, but still easy to maintain

19 SETUP: ACI MENU ROTATION  Menu category for each day in rotation  Multiple sets where needed  Specific menu categories placed on custom menu pages
