3  Only starch is acted on chemically in the mouth.  Salivary amylase, a digestive enzyme, begins the chemical process by which starch is changed to simple sugar (glucose).

4  Proteins and fats undergo mechanical digestion in the mouth, but they are not chemically changed.

5  Mechanical digestion – break down food with teeth and tongue (proteins, fats, and carbs)  chemical digestion – enzyme breaks down carbs (salivary amylase)
