Turn in handout # 135/137 from the last class. This is your “lab pass” for the next activity. Must be turned in the first 5 minutes of class for credit.

2. Mexican Corn Muffins
Copy this recipe onto the index card-it is the only copy you will get and you must have it for the next food lab-next Wednesday
You must also have the handout #135/137-it is your “lab pass”

3. Mexican Corn Muffins Ingredients: 1 package yellow corn muffin mix
½ cup milk
½ cup drained whole kernel corn
2 tablespoons drained chopped green chilies
1/8 tsp cayenne pepper
Directions:
Preheat oven to 400
Line 6 muffin cups with paper liners
Mix muffin mix and milk. Stir until just moistened
Add drained corn, peppers, and chilies.
Spoon even amounts into muffin cups.
Bake minutes until golden brown
Remove from muffin cups
Makes 6 muffins
