Savoury Dishes: “Toad In The Hole” Sausages are cooked in a light butter which rises to a crisp, brown crust, making this a tasty and substantial supper dish.

Ingredients: Serves 4 90 g /3 ½ oz / scant 1 cup plain (all-purpose) flour 30 ml/2 tbsp chopped fresh parsley 10 ml/2 tsp chopped fresh thyme 1 egg, beaten 300 ml/ ½ pint/1¼ cups milk and water, mixed 60 ml/4 tbsp oil 450 g/1 lb good-quality sausages salt

Steps 1-3 from 4 1.Stir the flour, herbs and salt together in a bowl and form a well in a centre. 2.Pour the egg into the well, then gradually pour in the milk and water while stirring the dry ingredients into the liquids. Beat to form a smooth butter, then leave for 30 minutes. 3.Preheat the oven to 220°C/425°F/Gas 7. Pour the oil into a small roasting tin (pan) or baking dish, add the sausages, turn them to coat them thoroughly in the oil, then cook the sausages in the oven for 10-15 minutes, until they are beginning to brown all over and the oil is very hot.

Step 4 and the Cook‘s Tip: 4.Stir the butter using a wooden spoon, then remove the roasting tin (pan) or baking dish from the oven and quickly pour the butter over the sausages and return the roasting tin (pan) or baking dish to the oven to bake for about 40 minutes (depending on the depth of the batter), until well risen and crisp around the edges. Cook’s Tip It is important to preheat the oil with the sausages so that the butter rises well and becomes crisp.
