4 THE SCOTCH MALT WHISKY SOCIETY (SMWS)
The Scotch Malt Whisky Society (SMWS), founded in Edinburgh in 1983, is a membership organization which bottles and sells single cask, single malt whisky. It purchases individual casks from more than 125 malt whisky distilleries in Scotland throughout the world, bottles them and retails directly to its members. It also runs three private members’ rooms in the UK and in several international locations. The resulting “outturn” of each cask is given a unique, two-part numerical identifier, representing first the originating distillery and second the individual cask from which the bottle was taken. The number of bottles available from each outturn of cask can vary- but single casks by their very nature only produce a limited amount of whisky so, more often than not, there is only a small number of bottles available, making each release and sought-after. SMWS 3.278 This is a Bowmore with a refill ex-bourbon hogshead whisky under the “Dirty martinis in the boat shed” bottling serie from SMWS. On the nose, candy floss, oyster shells, sea breezes over the machair, boat sheds and woolly socks drying over wood burning stoves. The palate has light heather and lavender smoke, peppercone heat, liquorice, sticky honey-glaze barbecued stuff and a zing of salt. SMWS 3.279 This is a Bowmore with a refill ex-bourbon hogshead whisky under the “Evokes Van Gogh’s Provence” bottling serie from SMWS. The nose is sweet (clover honey, toffees) and savoury (Chinese ribs, honey-cured bacon), with clams, salty sea breezes and heather moor-burn. The palate has toffee, honey, perfumed smoked and “more lavender than Van Gogh’s Provence; Edinburgh Rock and Trebor mint chalkiness. SMWS 3.297 This is a Bowmore with a refill ex-bourbon hogshead whisky under the “Shrimp a la Plancha” bottling serie from SMWS. On the palate initially like shrimp a la plancha with “Pimenton de la Vera Dulce” (sweet smoked pepper) and garlic oil followed by crispy lobster skewer with green papaya and mint salad. Diluted, like an anise-flavoured liqueur mixed with water or a glass of chilled Pouille Fume wine and to taste a perfect summer fare; roasted mackerels with samphire. SMWS 7.155 This is a Longmorn with a 2nd fill ex-Sauternes hogshead whisky under the “Making cakes by the crackling fire” bottling serie from SMWS. Candied orange, stone fruits, cape gooseberries, honey, coconut milk and salted butter, nutmeg, aniseed and cloves. The smell was glorious! As the bitter wind blew forest leaves under the door we huddled around the fire with a hot cup of black tea and a block of dark chocolate. After maturing for 24 years in an ex-Bourbon hogshead this whisky was transferred to a 2nd fill ex-Sauternes hogshead for the remainder of its maturation. SMWS 10.85 This is a Bunnahabhain with a 2nd fill ex-sherry butt whisky under the “Live life on the edge!” bottling serie from SMWS. The flavour is sweet and thick like sponge pudding. Water released the image of horse riding on a beach during a shoer, finishing with a glass of Amontillado. All prices are subject to 10% service charge and prevailing government taxes

This is a Tomatin with a 1st fill barrel whisky under the “All toasty and cosy” bottling serie from SMWS. A silky veil sweet of vanilla and butter pastry. Floral honeysuckle and elderflower tantalised and teased before delicately delivering custard creams, candy canes and pink Turkish delight. A citric breeze of kiwi and fresh strawberry passed by perhaps mixed and mashed into a creamy milkshake. Then the dry spiciness of pink peppercorns and sweeter garam masala with turmeric blending perfectly with the woodiness of dry seasoned oak. The finish was rich and long lasting, chewy and pleasing, with a memory of butter on toasted malt loaf. SMWS This is a Laphroaig with a refill ex-bourbon hogshead whisky under the “Cowboy beans” bottling serie from SMWS. Quite rich malty nose with that sweet peat note. Honey, lemon curd, chemical smoke. Hints of new leather pomelo, grapefruit. Bitter wood and dry leaves at first, then a big wave of brine. Long, soapy and salty dried fish. Sweet peat, quite dry. SMWS This is a Laphroaig with a refill ex-bourbon hogshead whisky under the “Smoked Salmon Candy” bottling serie from SMWS. A combination of salmon, salt, maple syrup and hours of smoking created this confection-like treat. Peat smoked scallops with a balsamic glaze. A drop of water and the smoke turned more perfumed. On the palate are rich hemp seed oil but at the same time still that alluring sweet smoke of salmon candy. SMWS This is a Laphroaig with a refill barrel whisky under the “Peat smoked candied Angelica” bottling serie from SMWS. A lovely smoky sweetness on the nose. The taste however was a medicinal peat smoke, ash and tar attack, almost acrid but saved by the dark sweetness of chewy treacle coffee. Water turned the nose into smoked chicken pot pie with a sweet potato crust and the taste will completely transformed; gentle sweet peat smoked candied angelica on a salted chocolate tart. SMWS This is a Laphroaig with a refill barrel whisky under the “Two wheeled beach cruiser” bottling serie from SMWS. The sweet smell of sticky pork ribs on a BBQ hung in the air along with smoked rhubarb crumble with whipped cream and roasted limes. SMWS This is a Laphroaig with a 1st fill American oak Pedro Ximenez hogshead barrel whisky under the “Bonfire on a rocky island shore” bottling serie from SMWS. Delicate smoke and fruit on the nose. Intense smoke and shovel-fulls of cigar ash but intriguing acidic sweetness brought satisfying sapidity to the smoke. The reduced nose found sea breezes, preserved limes, prunes and fig rolls. On the palate lemons on fruits de mer- everlastingly enjoyable. SMWS This is a Glen Moray with a refill ex-bourbon hogshead whisky under the “Curry in a Hurry” bottling serie from SMWS. An initial aroma of newly varnished wood was soon followed by profiteroles with hot chocolate sauce. The taste was that of lentil stew with Peshwari naan bread. Diluted: caramelized onion and apple chutney, and in the finish a mango lassi. All prices are subject to 10% service charge and prevailing government taxes

6 SMWS 50.91 This is a Bladnoch with a refill barrel whisky under the “A Throwback” bottling serie from SMWS. Aromas of strawberry cream candy, pineapple chunks, fuzzy peach candy, caramelized banana ice cream in a chocolate cone. Taste of dark chocolates with a stem ginger centre or a runny sweet and lightly salted caramel core. Diluted we reached for a tangy lemon ice cream with plenty of lemon zest and juice whilst on the palate, a crisp apple dipped in gooey caramel and crunchy rainbow sprinkles. SMWS 54.45 This is a Aberlour with a 1st fill barrel whisky under the “Drunked Cherry Coconut Ice Cream” bottling serie from SMWS. Juicy fruity on the palate; a tropical fruit salad with chunks of pineapple, mango, kiwi and papaya with the addition of a creamy coconut almond dip! SMWS 55.41 This is a Royal Brackla with a 2nd fill Sauternes hogshead barrel whisky under the “Soothing and Inviting” bottling serie from SMWS. The nose was invitingly sweet, fruity and juicy. Candied orange and lemon slices, pineapple, apple sour liqueur and candy floss with some sweet Madeira wine depth behind it all. The palate had toffee chocolate éclairs and cinnamon Danish sweetness but with a spritely chilli and popping candy mouth-feel. 9 THE SINGLE CASK The Single Cask is a whisky shop, bar and independent bottling company run by Ben Curtis with offices in London and Singapore. The whiskies bottled are all single cask, single malt and grain bottlings at natural strength, which are available to several markets around the world, including the UK, Singapore, Denmark and Taiwan. The independent bottling company was founded in 2010 and initially called Malt Vault, although it began bottling under The Single Cask label at the same time. American Sour Mash 5 Years Old #311 An independent bottling of 5 years old American sour mash whiskey from an undisclosed distillery in Tennessee, bottles by The Single Cask. 115 bottles were produced. Caramel and sweetcorn with hints of toasty oak and spearmint. Herbaceous as it opens, soon giving way to yet more caramel. White chocolate and cherry drops. English Whisky Co. 7 Years Old #443 7 years old English whisky from the English Whisky Co., independently bottles by The Single Cask. A small release of only 249 bottles. Thick cut marmalade, peppery oak leading into salted caramel brownies. More vanilla-rich baked goods with a touch of honey in the mix too. Apples and pears covered in toffee. Tomintoul 22 Years Old 1995 #2156 22 years old single malt from Tomintoul, drawn from a single cask and bottled by The Single Cask! This was distilled in May 1995 and bottled in May 2017 with an outturn of just 264 bottles. Guava, lemon cheesecake, a little whiff of tobacco. Deliciously creamy, with waves of vanilla, sponge cake and butter. Slightly developing hints of brown sugar and black pepper. 10 SINGLE MALT | SCOTLAND, SPEYSIDE
Speyside single malts are single malt Scoth whiskies, distilled in Strathspey, the area around the River Spey in Moray and Badenoch and Strathspey, in northeastern Scotland. Speyside whiskies can generally be classified as light and grassy or rich and sweet. Balvenie 12 Years Old Double Wood Grist ,supple nuttiness intertwined with spices. Honeyed sultanas and grapes hugely inviting. Balvenie 14 Years Old Caribbean Cask The aroma is rich with notes of tropical fruits, namely passion fruit and creamy toffee. Sweet vanilla forms a creamy palate with notes of apples and mangoes with hint of orange in the background. The finish lingers with a vanilla focussed character. Balvenie 17 Years Old Double Wood An elegant nose, complex with oak, vanilla, honeyed sweetness and a hint of green apple. Sweet with dried fruits, sherbet spice, toasted almonds and cinnamon, layered with a richness of creamy toffee note, traces of oak and vanilla. Balvenie 21 Years Old Port Wood A perfume of fruity and ripe raisin notes, backed by a nutty dryness. Refined with remarkable character, it is creamy and silky with fruit, honey and spice notes. Long, gentle and nutty. Benriach 16 Years Old This smooth single malt has an elegant full taste and aroma that captures fruity, floral notes with fascinating overtones of honey, vanilla, spices, toffee and apples. Rounded medium to full bodied. Benriach 20 Years Old Big oaky presence, malt and toffee. Warm honey, floral and malty mouthfeel. Long finish, oak, some caramel and cream. Benriach Limited Release 1996 Single Cask PX Sherry Finish 18 Years Old Limited to 668 bottles worldwide. A fantastic explosion of fresh citrus zest rolls over richly stewed plums and Demerara sugar. Crisp barley and black pepper fills with a sweet rich warmth. Benriach Limited Release 1994 Peated/ Oloroso Sherry Wood 20 Years Old Limited to 678 bottles worldwide. Floods of earthy peat reek combine with classic sherry characters. Rich prunes flow to sweet sundried raisins engulfed in the unique burning heather smokiness. Chieftain’s Glentauchers Years Old It is light on the nose but spicy on the palate with notes of dried fruit, vanilla and oak. The finish is long, warm and very dry. 100% matured in a first fill sherry cask. Natural cask strength at 63.9% ABV. Cragganmore 12 Years Old An aromatic blast of citrus to begin with – orange and lemon oil then soft aromas of toffee, roasted almonds and malted biscuits follow. Very clean and appetising with a gentle floral character. The fresh citrus notes continue on to the palate, joined by sweet toffee, malt and oat biscuits. The gentle malt fades lightly. Glenfarclas 105 Great depth, sherry, creamy and nutty. Honey on toast, touch of smoky coffee. Silky, spicy and peppery oak. Almond, dry and assertive, develops quickly to reveal a rich spiciness combined with a hint of oak and sherried fruit. Amazingly smooth for the strength, wonderfully warming and with a lingering smokiness yet very rounded. Glenfarclas 15 Years Old Intense, powerful sherry, cream sherry, complex, deliciously peaty, light butterscotch aromas with a hint of dried fruit. Full bodied with super balance of sherry sweetness, malty tones and peaty flavours. Incredibly long, complex. Long lasting gloriously sherried, sweet , gently smoke and distinguished. Glenfarclas 17 Years Old Complex, with distinctive butterscotch, sherried fruit and peat smoke aromas. Big, full-flavoured with excellent balance, develops slowly, full of sherry sweet malty tones and a touch of peat smoke. Long lasting and smooth with a hint of spice and sherry sweetness. Glenfarclas 21 Years Old Dark amber gold. Intense, full of aromas. Sherried fruit, tropical fruit, nutmeg and almonds with slight citrus notes at the end, all held together with a vanilla sweet smokiness. Full bodies rich and rounded develops slowly into fruity, smoky and spicy flavours. Long lasting, smooth and an incredibly rounded whisky. Glenfiddich 12 Years Old Distinctively fresh and fruity with a hint of pear. Beautifully crafted single malt with a delicately balanced fragrance. Characteristic sweet, fruity notes. Develops into elements of butterscotch, cream, malt and subtle oak flavour. Glenfiddich 15 Years Old Intriguingly complex aroma with sweet heather honey and vanilla fudge combined with rich dark fruits. Silky smooth, revealing layers of sherry oak, marzipan, cinnamon and ginger. Full bodied and bursting with flavour. Satisfyingly rich with lingering sweetness. Glenfiddich 18 Years Old Remarkably rich aroma with ripe orchard fruit, spiced apple and a robust oakiness. Richly delivers luxurious dried fruit, candy peel and dates overlaid with elegant oak notes. The Glen Grant 10 Years Old A huge 95 points from Jim Murray’s Whisky Bible in 2013, along with the title of Single Malt of the Year (10 YO & under). Orange and lemon zest, vanilla cream and toffee. Oily with fudge and cream chased by orange, lemon, honeysuckle and sweet apple. Freshly crushed grain, soft apple and a hint of peach. The Glen Grant 18 Years Old Jim Murray’s Second Finest Whisky in the World, as well as his Scotch Whisky of the Year in his Whisky Bible 2017! Rich and floral with oaky overtones and hints of baking spices. Malty caramel, delicate, dried raisins and vanilla. Long, sweet with hints of nuts and spice. The Glenlivet 12 Years Old Sweet creamy vanilla, honey, pineapple, pressed apples and a little cinnamon. Apple cores, fresh and fruity trifle and creamy citrus on the palate with long and delicious, almonds and apple finishing. 12 The Macallan 12 Years Old Sherry Oak
Glenrothes 1998 The latest core expression from Glenrothes catalogue, very spicy and creamy with oodles of sweet vanilla, ginger nut biscuits, golden syrup, hints of citrus and malt. Rhubarb crumble with hot custard and hints of black pepper palate. Good length with more vanilla and a suggestion of nutmeg on the tail. Glenrothes 1995 Buttery toffee apples and hints of allspice. A little milk chocolate, Manuka honey, dates and cinnamon. Creamy malt, sherry and peanut butter on the palate with a long finish with toasted almonds and golden syrup. Knockando 12 Years Old The nose is quite gentle and very fragrant. Notes of waxy Manuka honey, hints of malted barley and roots with a touch of cut hay. There is a very supple, chewy peat lying quietly in the background. The palate is quite full with notes of honeyed sweetness with Jamaica ginger cake, a touch of rum with malty peat. The finish is quite long with winter spice and crystallized stem ginger with cereal notes. Mortlach 18 Years Old Nutty at first, followed by vibrant spices – think ginger and cinnamon – paired with fresh green apples and lemon zest. The decadent syrup and caramel notes develop on the palate with oak, earthy tobacco and almond adding depth. Citrus, mocha and more tobacco notes last. The Macallan 12 Years Old Sherry Oak Vanilla with hints of ginger, dried fruits, sherry sweetness and wood smoke. Deliciously smooth with rich dried fruits and sherry balanced with wood smoke, spice and sweet toffee, lingering wood smoke and spice finish. The Macallan Classic Cut 2017 Edition The impact of juicy dark fruits- raisins, sultanas and prunes are less dominant and this lets the other flavour characteristics to show up more. Presence of oak along with vanilla and honey is strong, ginger and nutmeg. Smooth and velvet mouth covering texture, warm red fruit compote covered with caramel. Wood influence is very distinct on the palate. Some fruit zestiness in the form of orange and lemon peels. Medium to long finish, dry oak aftertaste with a spicy touch. The Macallan 1980s 12 Years Old The Macallan 1861 Replica Potpourri spice card board, flapjack, syrup rosewater, custard. Supplely smooth, very sweet, restrained bitterness, candied orange peel. The Macallan 1876 Replica Rich in summer fruits, fresh and dried with traces of spice. Light vanilla fudge, sweet oak and wood spice. Tamdhu 10 Years Old Dried orange peel, red wine, pecan and raspberry jam. Soft red fruit followed by brown sugar and spicy clove. A touch of chocolate-covered Brazil nut. 13 SINGLE MALT | SCOTLAND, ISLAY
Islay (pronounced “eye-la”) whiskies are among Scotland’s most powerful, thunderous drams. Often with plenty of peat and smoke, brine and medicinal flavours of all the whisky regions of Scotland Islay has attained a truly iconic status. Ardbeg 10 Years Old A range of vanilla leads to mountain of peat capped with citrus fruits and circled by clouds of sea spray. Sweet vanilla counterbalanced with lemon and lime followed by that surging Ardbeg smoke that we all know and love. Long and glorious; sea salted caramel and beach bonfire smoke. Ardbeg 1999 Galileo 12 Years Old Clear, light coppery amber. Dried apricot fruits with clove infused linseed oil and faint toffee and fudge. Rich, fruity and spicy with just enough dry sandalwood, bitter almond and tea like tannins to add balance and depth. Ardbeg 1973 Single Bourbon Cask #1146 Aroma is rich and sweet, bursting in flavor. Delicious mixture of custard creams. With water, the aroma becomes immensely creamy, oily and floral. Floral and smoky bringing currants and dates. Ardbeg 1976 Single Sherry Cask #2396 Hints of marzipan and toasted coconut emerge with a subtle whiff of fresh paint. The perfume of parma violets and jasmine tea emerges with hints of coconut. The taste becomes biscuit with hints of ginger biscuit. Ardbeg An Oa Maturation took place in a combination of casks including Pedro Ximenez, charred virgin oak and ex-bourbon! The citrus notes are subtle and rich, coming through as flourless orange cake. Sweet, creamy and offers notes of butterscotch, fennel seed, tobacco leaf, honey nut clusters and hints of mixed boiled sweets. Still plenty of peaty oomph although perhaps lighter in body. Notes of cigars and golden syrup flapjacks with sweet black tea on the tail and hints of chocolate limes. Ardbeg Ardbog A limited edition Ardbeg released during the Feis Ile whisky festival. Aged in a combination of bourbon as well as some Manzanilla sherry casks, it was produced fro “Ardbog Day”, which was celebrated around the world on 1st June Sea salt and brine with some dark fruit and hints of barbecue. Maple syrup, plum, orange, mint and more herbal notes with a touch of tomato vine. Big- it feels like all the moisture is being sucked out of your mouth at first but in a good way! Salt crusted raisins, rich nuttiness. Ardbeg Corryvreckan Sticking plasters, buttery, creamy, roast chicken crisps, herbal, almost a hint of pine…. Cream, spices, tingling, fresh fruit, medicinal, plasters, orange peels. Salty, smoked meats, peat is fleeting. Astonishing. Ardbeg Uigeadail The undiluted nose is deep and rounded- chocolate caramels and barley sugar combine with dates, raisins and smooth sherry notes. Sweet, chewy and oily with a silky mouthfeel. 14 Ardbeg Kildalton 2014 Release
This special limited one-off Ardbeg was released in order to raise money for The Kildalton Project- is an effort to “support” fragile, rural communities’ across the North Highlands. In particular, a good portion of the funds are to be used to restore the St. Columba Village Hall in the distillery’s near-neighbouring village of Port Ellen. Smoky and briny, but soft for a contemporary Ardbeg. Lemon squeezed over oysters on the half shell. A little bit of lime and chocolate too. Quite coastal and oceanic. Good balance of peat and sweet. Ardbeg 21 Years Old 2016 Edition This new limited edition Ardbeg Twenty One is a non chilli filtered, matured entirely in 200 litre ex-bourbon casks and bottled at 46% ABV. Old gold on the colour. As expected with an older whisky, the peat isn’t as pronounced. Very coastal at first, with salt-spray and lemon juice. Once that settles there’s a beautiful sweet peat note mixing with the vanilla from the American Oak. Smoked salmon, sage, assam tea, burnt bacon. Gentle but there’s plenty of peppery warmth- either from the peat or the wood, it’s quite tightly bound together. Vanilla returns with a touch of floral honey combined. Ardbeg Dark Cove At first meaty, earthy and spicy with bold notes of dark chocolate emerging against orange, treacle toffee, coffee and oak, a smoky background and a mysterious floral note. The mouthfeel is almost tart, with raisins, dates, ginger and pepper spice surge and waves of smouldering charcoal, wood polish and creosote notes, leading to cured smoked ham and squid ink noodles. Long and spicy and rich with notes of toffee, coffee and tar. Ardbeg Kelpie Kelpie gets its name from the kelp seaweed found around Islay and is finished in oak from the Adyghe region of Russia near the Black Sea. The nose is peaty and complex with notes of seaweed, brine, dark chocolate, smoked salmon and a hint of honey. The taste is spicy, smoky and pungent with notes of clove, peat smoke, bacon and hints of toffee and dried fruits. The finish is very long and smoky with lingering clove, hints of creosote and touches of caramel and dark chocolate. Ardbeg Supernova 2015 Release In case you didn’t know, tubes of “Ardbeg-crafted molecules” that also contained sticks of charred oak was sent to space. The idea was to compare their interactions to those of control samples on earth and the result have now been published. To celebrate he conclusion of Ardbeg’s experiment in space, they released this final Committee release of the super-duper-peated Supernova single malt. At 100PPM compared to Ardbeg’s usual 55PPM, this is one of the most heavily-peated whiskies in the world! Deep with smoked chilli, soot, vanilla, green banana and linseed, tinned nectarines, cocoa and vanilla. Super peaty toffee, crystallised ginger, lime marmalade, star anise, iodine, sweet vanilla and espresso. Candied peels and chilli. Bowmore 12 Years Old Coastal smoke and ash soon make way for bergamot, orange zest, lemon slices and some hay before becoming rather floral, heather smoke now competing with the ash. Lovely and rounded, honeyed even, initially. Vanilla, perfumed smoke and coastal elements develop. Dark peat, blossom, oily sweetness. Smoky and long. Sea spray, dry grass, a touch of ash and citrus. Bruichladdich Islay Barley 2010 The promised sea breeze is unmistakable, white pepper spice tingles and smooth vanilla and toffee present cautiously. Full and rich buttery goodness facilitates a sharp, malty brown sugar and creamy vanilla custard. A slight oiliness soothes emerging spice. Crisp, summery berries meld with ripe apple and settle with fresh citrus notes that calm the rich palate. Bruichladdich Black Art 5.1 Burnished cherry wood; exquisite beading. Essence of dried fruits like fig, dates and apricots. Plum , orange, raspberry and champagne grapes can be detected. Delightfully bitter oak tannin from European “premium” wine casks. Marshmellow nougat. Bunnahabhain 12 Years Old This 12 years old is lightly peated, fresh, sweet, seaweed, malt. Soft and supple on the palate. A little sweetness, malty, juicy sultanas. Slightly coastal. Sherried, mochaccino, herbal, balanced salty. Bunnahabhain 18 Years Old Salted caramel leading to sticky toffee pudding sprinkled with nutmeg. Dense, rich sherried notes perked up with a coastal saltiness. On a second wave roast chestnuts emerge and gentle wood spice. The finish is warming and lengthy; salt and sherry towards the very end. Caol Ila 12 Years Old Fresh, herbal with rubbed peppermint leaves, damp grass, smoky. Oily, cigar leaves, smoked ham. Good body, elegant smoke. Hints of boiled sweets. Laphroaig Triple Wood Molasses and oily toffee. Dates, walnuts, notes from the Maker’s Mark barrels (vanilla, toastiness, sweetness etc.). Dry and medicinal with exotic spices, perhaps even some turmerics. The palate is surprisingly savoury at first- think musty wood sheds and hints of moist autumnal forest floor. Oaked. The mustiness carries into the finish, which lasts for a good while, with oily spices and dried fruit. Laphroaig 10 Years Old This opens on big, smoky muscular peat notes. There are spices and liquorice as well as big dose of salt. Seaweed-led with hints of vanilla ice cream. An upsurge of spices develop- cinnamon, black pepper and chilli. Big and drying as the savoury, tarry notes build up with an iodine complexity. Laphroaig 10 Years Old Cask Strength Batch #008 Hints of cold wood ash and buttered granary toast with not quite enough honey. A very evocative scent, which gives way to peaches and cream and Lapsang Souchong and allspice. Very robust, and intensely “muscular”, this is a real brute, with all kinds of smokiness. It’s almost like crunching down on a lump of coal (but one coated in beautifully sweet toffee). Good length, drawn out by the embers on a fire, vanilla, charred bourbon barrels and toffee apples by a fireworks display. Laphroaig 15 Years Old Zesty oak and warm peat smoke top notes, with sweet undertones, reminiscent of fresh nutmeg and toasted almonds. Faintly salty, smooth and more elegant elder sibling to the robust 10 years old. Laphroaig 18 Years Old This is a beast of a whisky, very big with a breakfast character. After a while of nosing it, you’ll start to get banana loaf, developing alongside the apple wood smoke. Very rounded and thick. Salt spray, fiery wood spices, dark and brooding peat, star anise, dark chocolate and stewed prunes. Very long with liquorice, orange marmalade, salty butter and kippers finish. Laphroaig 25 Years Old Matured in second -fill Oloroso Sherry cask and American oak ex-bourbon barrels for 25 years! Initial sherry sweetness followed by an Islay peat tang. Burst of peat restrained by a sherry sweetness that develops into a spicy apple fruitiness. Very long and slightly dry finish. Laphroaig 30 Years Old A synergy of mandarins and mango round up the aromas of burnt almonds and coconut. Peat oils, smelling like cedars, boxberry and smoky sage gives this premium whisky its distinctive and characteristic flavour. A drop of water sets hints of honey and apricot free. Wonderful oily, the aroma of orange peels, vanilla and coriander merges with those wild ginseng and cigar. Long and complex with hints of stone fruits and green, hand-rolled tobacco. Port Askaig 100 Proof Earthy smoke rises first, shortly followed by smoked meats, citrus peels and a heaped spoonful of brown sugar. Zesty lemon and lime, paired with ground cumin and a touch of apple juice. Rather long and enjoyable. Port Askaig 15 Years Old Toasted rye bread with blackberry jam, dry smoke and dried earth. Floral malt at first, followed by Sherried peels and waves of smoke. Lingering charcoal and a touch of rock pool. Port Ellen 1982 Silver Seal 20 Years Old A 1982 vintage Port Ellen from independent bottler Silver Seal, bottled at 20 years of age in November 2002 from a sherry cask. The distillery was sadly closed the year after this was distilled and has gained a cult following since with bottles being in high demand. As a very vague rule of thumb, the Highlands region is one of big-bodied whiskies, often peated and smoky and powerful. The Highlands is such a large, diverse region that is difficult to categorize their whiskies accurately. Ardmore Single Malt A young peat Highlander from the excellent Ardmore Distillery. Creamy peat tang and a touch of vanillas soft gentleness if a touch of water is added the flavours increase with the addition of a sweet ripe fruit start followed by the tars of peat. Ben Nevis 10 Years Old Fresh and quite dry. A supple greenness with soft leafy notes with a rich fruitiness. Hints of orange and Seville marmalade with a light vinous character and nutty undertones. Gentle dryness. Toffee. Looming omnipresent are solid peat notes with a bitter sweetness. Silken, toffee and caramel notes balanced with a touch of mochaccino and dark chocolate on the tail. Clynelish 14 Years Old A delightfully complex spicy and perfumed nose with some floral and malty hints. The palate is multi-layered too with some slight citrus hints on a honey background with peat and delicious spices before a honey finish with a trace of brine. Dalmore 12 Years Old A toasty, coffee-rich dram with beautifully spice notes and a thick mouthfeel. The oily nuttiness in a fine espresso, little notes of malt and cereal and butter. Very rich for a 12 years old. Dalmore 18 Years Old Dalmore’s stunning 18 years old Highland malt is as rich, fruity and spicy as you could ever want from a Dalmore. It is aged for 14 years in American oak, followed by 3 years in Matusalem sherry butts, before a final year in sherry butts. Fruity and spicy with notes of vanilla, orange zest and potpourri, marmalade and sweet milk chocolate. A touch of leather and sultanas. A delicious fireside dram with notes of chocolate raisins, juicy citrus, stewed fruits, old sherry and pepper. A long, fruity finish ending on almond, buttery toffee apples and cocoa. Dalmore King Alexander III A sextuple-wood bottling from Dalmore. This auspiciously-named dram was matured in Wine, Madeira, Sherry, Marsala, Kentucky bourbon and Port casks. King Alexander III is a rich, fruity Highland single malt. Malty and utterly Dalmore. Seville orange zest, Parfait Amour, malty cereal, barley and chocolate. Creamy vanilla fudge, tropical fruit with a vaguely vinous quality. Medium, rounded. Winter berries, spice, zesty orange. Liqueurs emerge; Gran Marnier, kirsch and Frangelico. 18 Deanston 14 Years Old Spanish Oak Cask
Honeyed scent of grapes, candied fruits, light toffee and chestnut cream with the gentlest hint of nutmeg. Rich Spanish brandy and dried fruits with notes of honey, chocolate, oak and allspice. GlenDronach 15 Years Old Revival This 15 year old GlenDronach marks the release of whisky under new distillery ownership. Matured in Oloroso sherry casks, this was awarded a Silver Medal at the 2009 Malt Maniacs Awards. GlenDronach 1993 Cask # Years Old This 23 years old from the GlenDronach distillery was distilled on 5th March 1993 before spending the next 23 years in a single Oloroso sherry butt. Bottled in October 2016, only 575 individually numbered bottles have been produced at a strength of 58.9% abv. A rich cherry wood in colour, the nose opens with chocolate covered raisins and rich prune syrup, with oak spices, cinnamon and black pepper. The palate has stewed barley notes flowing through rich fruit cake with dark chocolate and oak spices adding to the long and warming finish. GlenDronach 1992 Cask #43 24 Years Old This 24 years old from the GlenDronach distillery was distilled on 1st May 1992 before spending the next 24 years in a single Oloroso sherry butt. Bottled in November 2016, only 644 individually numbered bottles have been produced at a strength of 52.1% abv. Robust notes of dark roasted coffee beans combined with sherry soaked dark fruits, infused with rich oak spices and a herbal back note. Rich dates and dark prunes spiced with stem ginger and black peppercorns, combined with dark chocolate and hints of tobacco leaves. Glengoyne 14 Years Old 2001 Small Batch (WM Cadenhead) This 14 years old Glengoyne, distilled in 2001 and bottled in 2015 as part of the small batch range by WM Cadenhead, one of the oldest independent whisky bottled in Scotland. 612 bottles were produced. Brandy soaked raisins. Vanilla flavoured tobacco and prunes. Quite stunning on the nose. Baked bananas and brown sugar. Light soya sauce and quite meaty. Lots of dark rich honey. The sherry cask is really in control here. Creamy with rich sherry notes. Soft spice with honey and soft salty notes making a nice surprising appearance. The rich fruity notes linger right to the very end. Glengoyne 15 Years Old Glengoyne's new 15 year old is a rich, rounded single malt, completely devoid of peat smoke thanks to air-drying the barley. It is aged in both bourbon and first-fill sherry casks, with some refill cask whisky thrown in for good measure. Hints of candied lemon and a touch of butterscotch. Creamy cereal sweetness and porridge oats. Demerara sugar. Oily, rich palate entry with notes of toffee popcorn, salted butter and hints of ground walnuts. Allspice and lemon rinds. Oaky, malty finish. Glengoyne 18 Years Old This 18 year old was aged in refill sherry and first-fill sherry casks. Hints of soft spice and dried peels. A little apricot, honey and vanilla. Glenmorangie Lasanta Elegant but full bodied maturing in American white oak ex-bourbon cask before being extra matured further in Oloroso and ex-sherry casks from Jerez. Deliciously sweet sherry flavoured sultanas, orange segments, walnut and butterscotch. Glenmorangie 10 Years Old Soft, clean and refreshing lemon sherbet and apricots, with honeyed fruit and a touch of toffee and vanilla. A little weightier on the palate with honey and malt, banana bread and subtle sweet spice. Glenmorangie 18 Years Old A wonderfully creamy and thick 18 years old dram. Matured for 15 years in ex-bourbon cask before being finished in Oloroso sherry cask, giving a creamy honey and Greek yoghurt, grapefruit, exotic spice, berry compote finish. Oban 14 Years Old Single Malt The nose is rich and smoky. The medicinal notes are quite evident with notes of the sea, seaweed, tarry ropes. There are notes of cut hay and wood smoke rising with a gentle estery sweetness. The palate is thick and full. Notes of citrus with smooth sweetness. The finish is of good length with fruit and dry oak. Old Pulteney 12 Years Old Deep amber with a slight pink hue. Medium to high intensity, dry with a briny hint of sea air. Sweet, floral, citrus : lemon and lime plus dry banana skin. Smooth and faintly salty. Old Pulteney 17 Years Old This 17 years old is comprised of 90% refill bourbon casks with the remainder being from oloroso casks. Lovely sweet aromas of butterscotch, honey and chocolate with some faint salt and oak spice on the palate. Sherbert, red berries, lemons and a little bit of rich fruit that’s almost on the turn. Sugar sweetness quickly leading to dry wood, with some dried apricots and raisins. Water brings out more fresh sweet and sour fruit- plums and their stones. Long with dry wood and apples. Royal Lochnagar 12 Years Old Planed wood, light toffee, boat varnish. Linseed oil behind, even putty and later a lychee-like acidity. With water the acidity comes through and the nose sweetens. A pleasant fresh woodiness, followed by warm sand. Medium-bodied. Dry medium length with an attractive lingering sandalwood aftertaste. The Singleton of Glen Ord 12 Years Old A fruity, well composed Singleton that manages to be both light and smooth without compromising any depth of flavour or fullness of palate. Winy top notes rapidly evolve into plummy fruits offset by zesty, oily orange peel. Then rich caramel toffees, chocolate and malty biscuits. XOP (Xtra Old Particular) Single Malt 30 Years Old A rich and warm spiced nose, carries ginger and butterscotch infused with a lemon zest quality. The palate is still spicy with a cedar wood character, developing to tobacco and liquorice and balanced by salted caramel. The Lowlands produces gentle, light whiskies, often very dry and devoid of peat. Lowland whiskies are commonly referenced as feminine drams, “the Lowland Ladies”. Most of the whisky regions of Scotland, and indeed the world, there can be some crossover. Lowlands is different where the method of production differs; Lowland whiskies are triple distilled. Auchentoshan 12 Years Old Smooth, fresh and nutty with a golden honey appearance. It has a crème brulee smell with a burst of citrus and the signature nuttiness and green leaf of Auchentoshan. Smooth and sweet with hints of tangerine and lime. To finish, it is gingerly and slightly drying with a pleasant lingering nuttiness. Auchentoshan Three Wood Intense, sweet and complex with a rich golden bronze appearance. It has a blackcurrant, brown sugar, orange, plum and raisin aroma with a fruit and syrup taste. The finish is fresh and fruity with long oaky sweetness. XOP (Xtra Old Particular) Single Grain 36 Years Old Initially sweet and juicy with fresh sweet floral notes and dried fruits of raisin and sultana and a huge hit of sweet juicy dried apricots. A diverse whisky region, the proximity to the sea often proffers slightly salty, sometimes smoky whiskies. Balance is a recurring theme; sweetness and pungency in perfect harmony. A decidedly eclectic assortment of whiskies is to be found on the Islands. Arran 14 Years Old This 14 year old bottling is aged in ex-bourbon for the first 12 years and then the final two years in fresh bourbon casks and fresh sherry casks. This sees no peated malt. The aroma is quite floral and fruity with a touch of wool detected. As you take a nip, salted peanuts come next with honey and warm cereal. The floral and fruity notes continue on the palate with sea salt and cinnamon.Thromais quite floral and fruity with a touch of wool detected. As you take a nip, salted peanuts come nt wit Jura Superstition Initial gristy cereal gives way to evocative smoke and heady malt. It’s quite sweet and creamy. A cereal fest on the tougue, with hints of white pepper and black forest honey with hot buttered toast. Light and oily. Medium length with cocoa and rice paper with hints of honey and spice on the tail. Ledaig 10 Years Old Quite light and well-balanced. There is a very soft peat with a subtle smoke. Notes of barley and malt extract with walnut and pine oil and a hint of iodine with notes of dried fruit and nuts. Medium-bodied and quite rich. Notes of spice and smoke gathering above the charred oak. The peat is quiet and dry with a touch of black pepper and earth. Medium length and slightly smoky with spice. Ledaig 18 Years Old 1998 #11211 Old Particular (Douglas Laing) Toasted barley, burnt oak and a whiff of summer BBQs! Well balanced smoke and sweetness, with the toasty peat coming out on top in the end. Bonfire embers and a little bit of red berry juice. Machrie Moor Cask Strength Toasty peat wafts up first, backed up by notes of fresh summer berries and tropical fruit. Grilled pineapple, raspberries and custard. Smoky richness persists throughout the entire palate. Lingering oak-y vanilla on the finish. Highland Park 12 Years Old Salted lemons, a whiff of charcoal smoke, crunchy green apples, tropical fruit chews, unripe mango, beeswax, honey, dusty wood and fruity dark chocolate. Starts off with syrup sweetness, quickly moving on to sour and creamy wood with more tropical chews, pineapple and smoked orange rind. Finishing with smoky wood, malt syrup, green pine cones and woody spice. Highland Park 18 Years Old A profusion of ripe floral notes and fresh blossom with a delectable fruit salad. Notes of honeyed exotic fruits with a little botrytis. Creamy and full with fruit conserves and espresso. A creaminess with cinnamon and allspice. 22 Highland Park Dark Origins
Dusty baking spices and cocoa at first, cinnamon, vanilla, dates. Coffee cream Revels (possibly a couple of the orange ones too), a touch of blackcurrant/ liquorice, plus butterscotch and an interplay between milk and dark chocolate. Sweet, fragrant peat emerges with nutty melted milk chocolate and a little orange alongside some pastries. Lonf and sweet, a little dry chocolate, just a hint of that heather smoke, then salivating. Rounded first-fill Sherry notes come from both the European and American oak casks. This is a great chocolatey addition of a no age statement release. Highland Park Harald Dark golden, clear and bright. Vanilla, ginger root, peat smoke, dried strawberries and sandalwood. Victoria sponge, grated nutmeg with a hint of lavender. Complex and spicy with hints of peel. Talisker 10 Years Old Brilliant gold, powerful peat smoke with just a hint of sea-water saltiness, fresh oysters and a citrus sweetness. Full-bodied. A rich dried-fruit sweetness with clouds of smoke and strong barley-malt flavours, warming and intense. Peppery at the back of the mouth. Talisker 18 Years Old The nose is quite clean and fresh. There is a mixed fruity sweetness with a spicy character. The peat and smoke rise with notes of perfume and thick oak. Hints of Calvados and a touch of acidity with ground ginger. The palate is thick and rich and full-bodied. Notes of spicy, peppery oak, espresso beans and wood smoke. Tobermory 10 Years Old Barley sugars and toasted cereal, supported by hints of winter spice and soft oak. Salty melted butter. Quite sweet and light. There are elements of acacia honey and continuing oak from the nose. Smoke and black pepper notes rise gently with a touch of dried fruit and peels. Campbeltown whiskies are a curious mix. Characteristics includes a defined dryness with a pungency, smoke and a solid salinity. Imagine a cross between the Lowlands and the Western Highlands with a pinch of salt thrown in for a good measure. Glen Scotia Double Cask Vibrant fruit emerges first followed by chewy vanilla fudge, a hint of salinity then array of oaky spices including some char. Opens with more fudge with a little dusting of powdered sugar. Powerful, oily and a touch herbaceous with some German brandy character. Sherried notes come through more on the finish. Finished in a combination of 1st-fill bourbon barrels and Pedro Ximénez sherry cask. Glen Scotia Victoriana Elegantly oaky with notes of toasty sugar and citrus peels, more fruit forward on the nose with dark berry juiciness at its core. Orchard fruits dusted with dark chocolate. Hazelburn 12 Years Old Pungent and aromatic with notes of dried fruits, plenty of sherry integration with notes of citrus, toffee and nuts. Spicy on the palate, nutty and cocoa rich, oak, coffee, gentle peat. Coffee, spices, citrus, chocolate, long finish. Longrow Salt and a leathery smokiness come to the fore in a maritime combination; like a Harbour Master’s Jacket. Light and sweet with notes of green grapes and rhubarb, a great contrast to the nose. Then comes a big blast of smoke. That salty smokiness returns from the nose providing a deeply satisfying ending. Longrow 18 Years Old A double distilled, heavily peated single malt from Springbank. Notes of fruit salad and a hint of caramel, pineapple, guava and passionfruit lurk. There are notes of dried leather and old ropes, a hint of toffee sweetness and some granary toast. Quite full and rich. Springbank 18 Years Old Toasted bananas, honey & bakewell tarts with coastal hints. Quite oily. On the palate is big, spicy and gutsy with hints of chilli, pine, citrus aniseed and rich fruits. Long, salty, chocolate caramels with hints of smoky fruits to finish. Springbank 21 Years Old Heather, plums and peach, quite dry but with hints of honey. There’s a slight waxy note too with a little bit of leather. Very soft with caramelized fruit and raisins and cassis. The spices include cinnamon and vanilla and there’s some oaky dryness to balance the honey. A subtle wood smoke and a hint of the sea. Single malt whisky is malt whisky from a single distillery, that is, whisky distilled from fermented mash made exclusively with malted grain (usually barley), as distinguished from unmalted grain. Under Scotch Whisky Regulations, a “Single Malt Scotch Whisky” must be made exclusively from malted barley, must be distilled using pot stills at a single distillery and must be aged for at least three years in oak casks of a capacity not exceeding 700 litres. Amrut Single Malt Cask Strength | INDIA “Amrut” means “Elixir of Life”. It has much in common with the finest whiskies of Speyside with its fruity, chocolaty and spicy notes, typical of maturation in ex-bourbon barrel. Firm, complex with ripe fruits and curcuma. Armorik Double Maturation | FRANCE From the Warenghem Distillery in Brittany, France, comes a complex single malt which is firstly aged in casks made from oak grown in Brittany. Following this, the whisky is moved over to Sherry oak casks for a finishing period. A French single malt with up-front notes of citrus and apple, soon joined by salted butter, rich oak and sea breeze. Braunstein Danica Whisky | DENMARK Braunstein is a relative newcomer in the world whisky landscape. It is a Danish micro-distillery and brewery located in the small town of Køge, not far from Copenhagen. Their production is mostly organic and local. The rich nose is full of white pepper, and woody, floral aromas. Also huge vanilla notes with toffee and some hints of sultanas come through. This rather thick and syrupy nectar flows onto the palate with masses of candied oranges, hot spices, caramel and some dark berries. The finish is warm and slightly grassy. nose iis warm and slightly grass Kavalan Single Malt | TAIWAN Fragrant and tropical fruits with floral notes, vanilla and mango. There’s mango throughout, spicy barley, gentle oak and creamy richness. A touch of allspice, vanilla and fragrant pear skin. Kavalan Solist Ex-Bourbon Cask Cask Strength | TAIWAN Quite complex, more dark fruits with some vanilla. Sweet at first with toffee and caramel accompanying the berries. Finish evolves into red apples, pepper and spice. Sullivans Cove American Cask | TASMANIA A real nuttiness emerges first completed with an amalgamation of cereal grain and oats. The palate is fresh and enticing with subtle notes of citrus and broader tones of vanilla. Vanilla and hazelnuts conclude this antipodean dram. Teerenpeli Distiller’s Choice Portti | FINLAND Portti is a port-cask-finished whisky from Finland's Teerenpeli. Rich and aromatic with notes of eucalyptus, aniseed, red berries and wood spice. Timboon “Christie’s Cut” | AUSTRALIA Named after the famous police officer John Christie, this whisky is big and bold. Ichiro’s Malt Wine Wood Reserve | JAPAN A “Pure Malt” whisky from the Ichiro’s Malt series, containing whisky from the closed Hanyu distillery and matured, vatted and bottled at the Chichibu distillery. This edition was given a finishing period in French wine casks. Chocolate orange, black liquorice and creamy malt. Red berry sweetness, oily walnut, white pepper. Opened in 1923 and owned by Suntory, it was Japan’s first commercial whisky distillery. 30 HAKUSHU CHITA The Chita Single Grain
Hakushu distillery is a Japanese whisky distillery. It is owned by the Suntory group and situated in the Toribara locality of the former town of Hakushu, in the Yamanashi Prefecture, Chubu region, Japan. Hakushu Distiller’s Reserve From the Hakushu distillery in the foothills of Mount Kaikomagatake comes their Distiller’s Reserve single malt whisky, a no-age-statement expression, that captures the smoky, herbaceous characteristics. The herbs are very up front with this one. Peppermint, pine and pleasant grassy notes. Cucumber and melon round out the nose. All the notes on the nose swim effortlessly through the palate, the mint developing sweeter notes as it goes on. A waft of smoke appears during the long finish. Hakushu 12 Years Old Toasted barley, seed and nut loaf, chopped almonds and a little bit of barrel char. Hints of milk chocolate and dried grass bring sweetness. Much more fruit on the palate, rich, herbaceous and grassy with a waft of smoke along the way. Quite short, though enjoyable with orange peel and a touch of minerals. CHITA Founded in 1972 in Aichi Prefecture, the Chita distillery located near the village of the same name and is exclusively dedicated to the grain whisky distillation. Suntory was rather quiet about Chita distillery even though it’s an essential element for the production of its blended whiskies which are among the best in the world over the last 10 years. The Chita Single Grain It is a vatting that consists of at least 10 different grain whisky components that have been matured in different cask types including American white oak casks, Spanish oak casks and ex-wine casks. The nose is soft, floral and quite perfumy at the beginning, then slowly lemon and honey flavours develop, followed by caramel mango notes. 31 CHICHIBU The Chichibu distillery is small, with only nine full-time employees. It is owned by Venture Whisky which was founded in 2004 in chichibu, Saitama, just outside of Tokyo, hence its name. The distillery which specializes in single malt whisky was the first whisky distillery built in Japan since the 1970s and became operational in It stands on a small hill in the outskirts of Chichibu, a city of medium size with a population of about 70,000. Ichiro’s Malt Chichibu On The Way (Bottled 2015) This is a 2015 bottling of single malt from Japan’s small but fantastic Chichibu distillery, released as part of their On Th Way series. Only bottles. Herbaceous at first, though soon enough hints of caramel and tinned peaches arrive. Baking spices, apples turnovers and slowly growing notes of nutty malt. Dried apple chips and hints of sawdust. Ichiro’s Malt Chichibu “Chibidaru” Chibidaru- Japanese for “cute casks” – are small casks that give lots of flavor quickly. Bursting with heady aromas of lemon and orange peel- like walking through a citrus grove in early autumn with fresh green apples, enriched by sweet milk chocolate notes. Fruity with lip-smacking green apple notes combined with perfumed apricots and peaches. There’s some bitter-orange marmalade in there along with earthy spiciness of cardamom and coriander seed. Very clean and refreshing as the fruit gently fades. Ichiro’s Malt Chichibu The Peated 2015 Cask Strength Ichiro’s Malt Chichibu “The Peated” 2015 is the third and strongest edition of Chichibu’s peated expressions to date. Limited to 5980 bottles, each individually numbered. Very smoky, buttery, vanilla, cinnamon, rosemary and pears. Sweet vanilla, black pepper, citrus with pink grapefruit notes, floral, dark chocolate. Long, smoky, peaty yet creamy. Ichiro’s Malt Chichibu Single Cask #2650 From its Mizunara wash backs and small stills with steep lyne arms to the fact that the mashman uses a wooden paddle to stir the mash, Chichibu is a hands-on distillery with quality as an intrinsic focus. With the ground now broken on a blending room, and an off-site cooperage, Ichiro Akuto's distillery, formed from the ashes of his grandfather's Hanyu distillery, is one of the finest producers in Japan. Hibiki is a premium blended whisky from Japanese distiller Suntory. It is a premium-category product and has won several awards. “Hibiki” means “resonance” or “echo” in Japanese. Hibiki Harmony Generous fruit continues to the palate with oranges and apricots in abundance, a little peppery spice but very soft. The spiciness taking over from the fruit and lingers along with a little barrel char finish. Hibiki Master Select Citrus blossom, mango and juicy raisins. A slight touch of vanilla-rich oak. Chocolate orange, creamy wood notes, dried apricot and sultanas, cinnamon. Plum and ginger, brown sugar and milk chocolate. Hibiki 12 Years Old An exquisite 12 years old blended Japanese whisky. Partly matured in plum liqueur barrels resulting juicy marmalade with chucks of ranges, cooked apples dusted with cinnamon. On the palate there’s crushed almonds, stewed fruits like clove-studded oranges, bright and flavoursome with crisp apple and citrus. Hibiki 17 Years Old Quite full. There are notes of honey and wax, resin and oak. There are notes of gentle smoke and cacao, hints of cooked fruit and a nutty note. Sweet and rich. There are crisp notes of mixed peels, raisin and custard with a little zest and plenty of oak. Long with notes of oak and cocoa and sherried peels. Hibiki 21 Years Old This was named World’s Best Blended Whisky in 2013 World Whisky Award. Scoring 96 points in 2014 Jim Murray’s Whisky Bible as well. Sweet, caramelized nuts with some lemon acidity, blackcurrants and pears with vanilla, dark toffee and rich sherry spice. 33 MARS SHINSHU Sandwiched between Japan’s soaring Southern Alps and the towering Central Alps, at just over 2600 feet, Mars Shinshu is Japan’s highest whisky distillery. The Hombo family have been distilling for more than a century and they added whisky to their repertoire in Back then the distillery was located in Kagoshima Prefecture on the southern most island of Kyushu. Until 1984, it was the southern most whisky made in Japan, which ended with the Hombo clan moving the distillery to the idyllic alpine setting of Miyada village in southern Nagano Prefecture. They chose this site for its cool temps, which slowed maturation, and the plentiful, soft, granite filtered snowmelt fed aquifers. 3 Years Old Komagatake 2011 One of the first whiskies to be released after the revival of the Shinshu Mars distillery, which stopped production in 1992 and in 2011 started reproducing. Distilled in 2011 and matured in a sherry and American white oak casks, this expression is bottled as a 3 years old at cask strength. Mars Komagatake Shinano Tanpopo- Nature of Shinshu The 2014 distillation of malt whisky vatting in new Bourbon and American white oak barrels, mixed with Sherry cask of malt aged more than 20 years old. It is the single malt whisky of soft and gorgeous scent with the flavour of ripe fruits from the long-aged malt in sherry cask. For the printing of the label, “ShinanoTanpopo” is an art work of japanese plant miniaturist called Nomura Youko. Komagatake Years Old A very rare single cask release from The Shinshu Mars distillery, which stopped production in 1992.  This is a single malt whisky and has been aged for 30 years in an American White Oak barrel. 35 SPIRITS BOURBON TEQUILA / MEZCAL
Bourbon is a type of American whiskey: a barrel-aged distilled spirit made primarily from corn. The name is ultimately derived from the French Bourbon dynasty, although it is disputed whether Bourbon County in Kentucky or Bourbon Street Bulleit Bulleit bourbon come from its unique blend of rye, corn, barley malt along with special strains of yeast and pure Kentucky limestone filtered water. Medium amber in colour with gentle spiciness and sweet oak aromas. Mid-palate is smooth with tones of maple, oak and nutmeg. Willett Rye Lively with youthful notes. A little burn which would be expected at this proof. The floral and botanicals are here as well. A little menthol comes forth, along with fresh cut grass and spice. TEQUILA / MEZCAL Agave, the plant from which tequila is distilled, played a much larger role than just being the source of an alcoholic drink. Its leaves were used for a hemp-like fiber to make mats, clothing, rope and paper. Don Amado Rustico Mezcal Don Amado Rustico is made in Santa Catarina Minas, Oaxaca by mezcalero Germán Bonifacio Arellanes. The same distillery also produces Mina Real Mezcal. This mezcal carries a bit of smoke, but it doesn’t overwhelm the fruit and floral notes that mix nicely with notes of minerals and clay. It is silky on the palate with a vibrant finish. Don Julio Blanco Sweet start with savory notes,then citrus notes and brine. Dry smooth finish with fresh ground black pepper notes. Crystal clear, lovely body. It was first produced in the Caribbean in the early to mid-17th century. Brugal 1888 Ron Gran Reserva Familiar A very special old rum from Brugal. This was twice distilled and aged in American oak before a finish in Spanish oak sherry casks. A dark rum from the Dominician Republic. Toasty and sweet with charred oak, sultanas, dates and honey with a touch of gentle smoke. Buttery and sweet with butterscotch, Demerara sugar, manuka honey and wafts of wood smoke. Toffee apple and salty butter. 38 APERITIF An aperitif is an alcoholic beverage usually served before a meal to stimulate the appetite. Campari A 19th century bitters in Milan by Gaspare Campari. It is made by infusing bitter herbs , plants and fruit in alcohol and water. Carpano Antica Bouquet of vanilla with spicy, citrusy and dried fruit notes of almond, raisin and cloves. Rich vanilla taste that picks up the aromas from the nose. Cynar Sweet and bitter with a hint of rust on the nose. The taste is initially light & sugary in slark contrast to Cynar’s dark colour. The finish is bitter, akin to a light espresso finish. Fernet Branca Aromatic, bitter, earthy with orange saffron and other lighter scents like myrrh in the background. Packed with peppermint, menthol and a punch of spice. Mancino Chinato A blend of the three Mancino vermounth - Secco, Bianca and Rosso with Barbera d’Asti D.O.C.G and pure quinine from the calisaya bark. It contains all the hallmarks of the Mancino vermouth portfolio; it lingers with a rich , deep and red bitter wine pallet makes a notable digestive or aperitif. Mancino Rosso This is part of a new brand of vermouth ,a drink where you don’t often see new brands popping up left and right. This is their Rosso Amaranto , made with a blend of 38 botanicals, a recipe created by Giancarlo Mancino himself. Mancino Secco A herbal, slightly nutty white vermouth made to a recipe created by renowned bartender Giancarlo Mancino using 19 botanicals, including Sage, Marjoram and Oregano. Punt e Mes The initial taste is ones of sweetness, characterized by an intriguing accent of orange. This is followed by the characteristically bitter taste of the quina and ends on a sweet note. Rinomato Ails from a collaboration between renowned bartender Giancarlo Mancino and his American partner, Fasel Shenstone. Born from the infusion of hand-selected botanicals into a distillate, Rinomato exhibits rich aromas of orange peel, vanilla, gentian root, cinchona bark and wormwood.
