A traditional Maltese Easter recipe
For the pastry 800g Self raising flour 240g sugar 240g margarine grated lemon or orange peel 4 eggs vanilla Filling 400g. Almonds 200g sugar 2 egg whites Almond essence Some water or orange juice Ingredients Figolli is a traditional Maltese Easter sweet
The ingredients for the pastry
Rub in margarine and flour together
Add the sugar and lemon peel.
Add the eggs and vanilla.
Form the pastry into a ball using cold milk or water. Leave to stand for 1 hour.
Ingredients for filling
Mix almonds and sugar together.
Beat the egg whites and add to the mixture.
Add the essence and mix together. Add some water or orange juice.

Roll out the dough.
Cut out shapes.
Fill with almond filling.
Cover with another cut out shape.
Cut various shapes.
Bake in a moderate oven for about 30 minutes.
Cover with chocolate icing.
