3 2 Full service restaurants Full service restaurants are fine dining or upscale restaurants with specific dedicated meal courses. Slow and gentle music together with candles create an elegant atmosphere. The staff are well trained, knowledgeable about the food and how it is cooked and wear a more formal uniform.

4 3 Full service restaurants Tables are properly set with linen, flowers, high quality cutlery, crockery and glassware. The food portions are smaller but the presentation is beautiful and visually appealing. The food prices are usually high. They have certain rules of dining which must be followed by visitors such as dress codes, restaurant etiquette and making reservations.

6 5 Family restaurants Family restaurants offer food and drinks at low/medium prices with limited levels of service and often high customer throughput. It includes more casual dining and they cater for families with children. These restaurants are usually part of a franchise and provide a play area for small children.

7 6 Family restaurants They have a fixed menu, fixed prices and separate children’s menus. Tables are usually covered in plastic, place mats are used, crockery and cutlery is medium quality and easily replaced if broken. Center pieces and candles are avoided as these could be dangerous for children.

8 7 Fast food outlets Fast food outlets attracts customers for its speed and convenience. They include take-away outlets, street vendors with carts and drive-thru venues. Most fast food outlets have seating area available for customers with loud and fast music as this makes people move and eat faster.

9 8 Fast food outlets They offer food and drinks served in disposable containers with disposable cutlery. Food is often eaten with fingers. Main function of staff are to clear tables not to serve customers. Customers at drive-thru outlets place and receive orders in their cars and drive away to eat.

10 Factors that tourists consider when choosing a restaurant Different people will have varying views on the factors that are important when selecting a restaurant.

11 10 Price Most tourist consider their BUDGET and choose appropriately. Usually a person will be prepared to spend more on a special outing but a family meal should be affordable. Choosing an expensive restaurant on price alone is no guarantee that your outing will be successful. Fast food restaurants will be the cheapest alternative.

12 11 Style of the occasion The reason for going out to eat will be most important when selecting a restaurant. You will rather celebrate a birthday with a large group of friends and family at a family restaurant. To impress important clients during a business dinner choose a full service restaurant A fast food outlet will be a good choice for a Friday night family supper.

13 12 Type of cuisine The type of food offered e.g. Italian or South African and the variety on the menu is important. The customer will select a restaurant according to the style and type of food they want to eat. The menu should cater for all tastes including vegetarian dishes.

14 13 Quality Quality of ingredients is a very important factor for all food outlets. Quality meat, fruit and vegetables that are nutritious and fresh should be used. Some restaurants will offer better quality food. The quality of the furniture, utensils and crockery will depend on the type of restaurant and the target market they are aiming at.

15 14 Quality of service and good atmosphere Wherever possible, choose a tried and trusted restaurant. The staff should be polite, helpful and knowledgeable about the food. The atmosphere, décor and table setting must suit the type of restaurant. If the restaurant offer good quality services they will be able to handle special requests such as allergies to some ingredients.

17 16 Dessert, ice cream and yogurt bars Serves food mainly prepared from dairy products, i.e. Milk shakes, ice cream cakes, dessert and light meals like pancakes.

18 17 TAVERNS A tavern serves alcoholic drinks but can also serve food. A tavern can also offer overnight accommodation for guests, but then it is generally known as an inn. SHEBEENS An unlicensed drinking establishment found in South Africa, Scotland and Ireland where alcohol is mostly sold illegally

20 19 Bars serve alcoholic drinks on their premises. The word ‘bar’ is taken from the counter on which the drinks are served. Bars provide chairs that are placed at the counter or at tables for their clients. In South Africa sports bars are very popular, especially during important sports events. There are also wine bars, such as those on wine estates where clients can taste wines before deciding what to buy. Bars can also serve food. Sometimes bars also provide entertainment, such as live bands or comedians. BARS

23 22 The Sunland ‘Big Baobab’ is in Modjadjiskloof in Limpopo Province, South Africa and is famous internationally for being the widest of its species in the world. The Sunland Big Baobab is carbon dated to be around 6000 years old. The Sunland Baobab has even made the front page of the Wall Street Journal! When baobabs become a thousand years old, they begin to hollow inside. In the Big Baobab this has resulted in wonderful caverns and caves, where the world famous Baobab Tree Bar and Wine Cellar now amaze visitors.

25 24 Sunland’s Baobab is 22 meters high, and is some 47 meters in circumference. It is still (and is likely to remain so) "the record holder for the species", according to the SA Dendrological Society. They squared off a natural vent in the trunk to make a door and installed a railway sleeper pub inside the trunk, complete with draft beer, seats and a music system. One party had 60 people inside the tree bar!. A wine cellar was installed in a second hollow, with a constant temperature of 22° C, ventilated by natural vents.

26 25 PUBS Pubs originated from ‘public houses’ in Great Britain. They are licensed to serve alcoholic beverages that must be consumed on the premises. Some pubs are also restaurants, but their purpose is to serve beverages rather than food, so it is quite acceptable to go to pubs and only order beverages to drink.

27 26 GROUP ACTIVITY In groups: Identify 1 type of tourist that will prefer each of the food and beverage establishments listed above, motivate each of your choices. Report back to big group.
