9 Oven Designs & the Beech Difference 1.Beech Ovens 2.Wood Stone 3.European (Italian) Modular Ovens
10
10 1. Beech Ovens The Beech Ovens stone hearth oven is designed to suit the modern requirements of the client, taking into account the functionality, design and installation needs. Beech Ovens were the first to offer unique accessories such as windows, spotlight and grills as well as a variety of intelligent exhaust solutions. Is manufactured and crated in 2 pieces, making it easier to install Has lifting hooks, can be easily put on its side and into an elevator and is not too heavy Has an external 5mm steel frame which prevents damage when being installed. Has a 4 Year Warranty Has much greater flexibility in design … you can tell us what size and shape oven you want. BEECH OVENS - the only oven top with a patent construction method - ¼” steel frame and post cast refractory ceramics into this frame. This results in a supremely robust, easy to install 4yr warranty, easily customised product.
11
11 2. Wood Stone Comes in one large piece fully assembled and is therefore difficult to install and heavier than most elevators can lift Does not have lifting hooks making it difficult to manoeuvre Has a 1 Year Warranty WOOD STONE who precast their tops and bases in one piece on a steel support frame. Characteristics – Well engineered, high thermal mass, thick floor and base, inflexible design. Difficult to install.
12
12 3. European (Italian) Modular Ovens European Modular Ovens can generally be described as ”cottage industry technology” being low cost, low quality, low performance ovens built the same way in Italy as they were 200 years ago. They have numerous shortcomings which make them unsuitable for the demands of your typical Franchise Restaurateurs. Virtually no large American franchisors use European Modular ovens. ITALIAN STYLE Modular oven assembled on a steel or concrete frame. These are most commonly imported in segments from Italy and assembled locally. Examples include Renato, Bravo, Clay Oven Company and Earthstone. Characteristics - Lightweight materials, low thermal flywheel, low strength in ceiling, inflexible design, difficult to install, Seldom used by the larger chain restaurants.
13
13 What Makes Beech Ovens & Wood Stone Market Leaders? Globally recognized high end stone hearth oven manufacturers. Super heavyweights of the industry - when chain buyers want to make an investment in stone hearth ovens, they choose one of these two companies. Beech Ovens greatest market dominance has been to date in the luxury hotel market all around the globe, in particularly China, India, Middle East and Australia. Wood Stone’s success is in United States and the United Kingdom Testament to the Woodstone salespeople as their ovens don’t lend themselves to being installed easily into tight spaces, which is where most trendy restaurants/pubs are located - on a high street which 6 times out of 10 means a heritage building that cannot be heavily modified to get a massive stone hearth oven into. Both companies offer a range of standard sizes and accessories plus have a variety of features which set them apart.
14
14 Market Leaders Continued – Beech Ovens Features Beech Ovens unique features are extensive Include the ability to custom make ovens to any specific size by providing: Intelligent exhaust options Unique accessories along Ready to façade oven Restaurateurs agree these things are important because it gives them a point of difference. Exhaust options set Beech Ovens apart Ensure they are at the forefront of venting design 90 % of clients want to vent their ovens into communal exhausts in high rise buildings. Beech Ovens Spray Filter Beech Ovens developed a unique “spray filter” Scrubs greasy hot air from the stone hearth oven leaving clean cool air. Used by luxury hotel clients across the globe but not USA. Spray Filters for stone hearth ovens are not permitted in the USA. 90% of all ovens sales include a spray filter although the ovens can also be vented using a canopy. These features can also be explained in more detail by photos and illustrations here.here
15
15 Market Leaders Continued – Wood Stone Features Woodstone’s unique features are the Under Floor Burner (UFB) and One Piece Floor (OPF). Under Floor Burner Required to put heat back into the floor as the heat is not contained within the chamber, but removed by the cooking process. For a more efficient approach, Beech Ovens designed their ovens to operate at a very high performance level using top heat only Beech ovens can perform under the most demanding conditions due to the incredible thermal flywheel in the dome The weight in the dome of a Beech oven is approximately twice the weight of the equivalent Wood Stone oven One Piece Floor Ceramic floor construction which invariably cracks due to thermal shock typically within the first day of operation. Beech Ovens use a similar material but in brick form which they believe is superior to a one piece floor. minimize floor damage in transit or on first use The floor of the Beech Ovens is typically in perfect condition even after 10 years of operation.
16
16 Beech Ovens = Innovators Overall, Beech Ovens are seen as the innovators, with Wood Stone often introducing similar products at a later date. Wood Stone have also made design changes following Beech Ovens’ move into the United States. Beech Ovens = Innovators Truly customised service which offers full shape, accessory and firing system flexibility. Specified by the world’s leading designers who are consistently pushing the boundaries of creativity and know that Beech are the only company who can support their unique requirements Taking into consideration the restaurant requirements, chefs needs and installation obstacles. Beech Ovens custom designed the following: 1.Fire & Stone, Convent Garden 2.Beau Rivage Casino, Biloxi Mississippi 3.Starwood Hotels, Asia (Expanded in the next slides)
17
17 Example 1: Fire and Stone, Convent Garden In response to the client’s brief for the biggest oven in the UK, Beech Ovens built a 2.5m diameter oven that split in 4 so that it could go downstairs to basement. No other oven fabricator offers this service. This same oven supplied by Wood Stone in one piece would have required the removal of a wall or roof 3m in diameter. Something that is not practical and sometimes impossible with a heritage listed building. This client received the biggest possible oven that weighed close to 4 ton and fitted through a standard single doorway.
18
18 Example 2: Beau Rivage Casino, Biloxi Mississippi In response to the client’s desire to have the biggest oven in USA, a village oven with 5 doors, operate on wood and gas and include a full size rotisserie, Beech Ovens, as the only company in the world capable of producing this oven, manufactured a 4m x 2.5 m monster that could fit into pieces to go into an elevator.
19
19 Example 3: Starwood Hotels, Asia In response to Starwood Hotels Asia – (Sheraton, Westin etc) wanting a show oven that could be loaded from the back and had massive flame visuals from the front., Beech Ovens were the company selected for this project due to their custom design capabilities. The result is an oven that the client and chefs rave about.
20
20 Beech Ovens Chinese Client List To date, China has been one of Beech Ovens’ largest international markets. Beech Ovens have clients in all regions of China including: BEIJING GUANGDONG HONG KONG LIAOYANG CITY MACAU NANNING SHANGHAI SHENZHEN TIANJIN XIAN DALIAN Some of Beech Ovens clients in this region include: HYATT WESTIN SHERATON HILTON KEMPINSKI CHINA TRUST GRAND MGM CASINO GALAXY CASINO VENETIAN ORIENTAL ONE CENTRAL RITZ CARLTON MARRIOTT GRAND STANFORD CAFE WYNN CASINO HKRYC INTERCONTINETAL Beech Ovens also works with all the leading designers in the region and are well known by the contractors throughout China.
21
21 Installation The unique design of the Beech Stone Hearth Oven means it easy to install and reduces both the need for additional crane equipment and labour, thus minimising installation costs which is extremely advantageous to clients.
22
22 Ordering & Manufacture Beech Ovens suggest you buy direct and pay the kitchen contractor a small margin and or installation / commissioning costs. Beech ovens will supervise the first installation and then subsequent installations we can offer a package for supervision if you require it. Most repeat clients around the world do not require our attendance. The ovens can be manufactured to a 4-6 week timeframe with shipping an additional (approximately 3-4 weeks). Order confirmation requires signed drawings, PI and where applicable a 50% deposit (custom orders). Payment can be made by TT or LC.
23
23 Conclusion Beech Ovens believes : The Beech Stone Hearth Oven durability and flexibility would be well received by CPK Chefs. The custom design capabilities of the Beech Ovens Team would offer unique features to highlight CPK restaurants globally. The easy installation abilities would minimise costs and improve installation time frames for engineers. The 4 year warranty is ideal for CPK. The after sales service, technical training and chef training is unique and a major benefit to CPK in terms of support.
